    I have always followed the picking recommendation from Leslie Doyle, owner of The Sweet Tomato Test Garden in Las Vegas. She grows outside in the hot desert! 😱. I live in Southern CA about 6 miles from the beach so it’s a mild climate for me. I pick a day after they start to go from green to color. It’s called First Blush. They ripen beautifully on my kitchen counter in 4-5 days. Leslie has picked at various stages of ripening and discovered there’s no flavor difference. She says once it begins to turn color then all of the flavor is set. I pick early to keep them away from birds. I’ve grown yellow, orange and red tomatoes and pick them all this way. They are delicious.

      Thank you for listing your source for this info! I had read this First Blush idea somewhere and figured I would try a blend of that and leaving on the vine. It's my first year growing tomatoes. They are in 5 gal buckets. No idea if birds or whatever will enjoy them before I can. My friend just lost all hers to critters!

      Mary Madigan i have the same problem- the critters (rats & opossums) enjoy the tomatoes once they are ripened too! I’ve found that if I pick them green and let them ripen on my kitchen counter I can dash their dastardly plans and enjoy the beautifully ripened toms I’ve grown.

      It depends on the variety. For example Amish Paste tomatoes will develop a more savory flavor if left to ripen on the plant. When picked early, they maintain more of a "Roma" store bought flavor; a bit more sweet and tart.

    Wisconsin here and YASSSSSS we wait all year for this!!! I like to reduce my balsamic vinegar by half in microwave because it becomes like syrup/glaze just be careful not it burn by checking frequently. Great on avocado toast as well with MORE TOMATOES!!! YAHOO, I am in heaven...

    I've always picked tomatos when they just start to colour up, and ripened them in a dark cupboard. The flavour is amazing. Works well in Autumn, when they are ripening too slowly on the vine.

    Brian you crack me up! That is why I love your videos so much. You made my mouth water with that salad. We have one ripe tomato too that I plan to cut up today for my burger tonight. Thanks for the tips for when to harvest your tomatoes. I was wonder when it the right time to pick them. The one we have was in location so tight I asked my wife how did she suggest on picking it. She managed to get it off with out any damage to the tomato and the others surrounding it. It was wedged between branches, other tomatoes and the tomato cage. Unfortunately she left the stem behind.

    I live in a short growing season so when I’m sure that the tomatoes are doomed to frost, I harvest all the tomatoes, even the cherries. I put them one layer deep in a card board box and cover the top so the tomatoes are dark. I leave them at room temperature. The tomatoes will ripen. They don’t eat the same as a fresh off the vine tomato but still better than store bought. One year I had too many to eat so I canned them and they were fine for soups.
    I can’t wait to try our tomato recipe. I’m just beginning to get some ripe cherries, eating my first one yesterday.
    My favorite fresh tomato recipe is similar to yours only the cut tomatoes are combined with slice black olives and put over fresh pasta. The mix is dressed with basil, a clove of garlic, olive oil and balsamic vinegar processed in a blender. Fresh parmesan is sprinkled on top. I don’t use exact measurements but its a salad, aye?

    My family loves Caprese salad. It's the reason I started growing basil. Looking forward to trying your recipe with the Costco mozzarella. One of my favorite tomato recipes, BLT (bacon, lettuce and tomato) sandwiches!

    Need more info on stopping watering. If ya have only a couple starting to ripen with multiple green doesn't that hurt production?

      Early Girls & Big Boys with lower tomatoes coming on here in Iowa. Meanwhile, the upper part of the plant is full of blossoms and green fruit, so withholding water not really an option. I cut the tomatoes from the vine when they're orange so they don't split because of the water. No problems with ripening on the kitchen counter or taste. We prepare them other ways, but salt & pepper on sliced tomatoes is my favorite way to eat them. They've got the full home-grown taste that sometimes gets lost if you doctor them up too much.

      @@groussac Harley Horton ... I had the very same question as you. It is a case of the presenters theory does not match reality. Now as for Mr Pierre...What a great answer. Thank you very much. I am old but very new to growing food (2 years). I was thinking that to get the BEST flavor, you needed to let the rippen on the vine as I read about this all of the time. Here in Australia the supermarkets actually state "Vine Rippened" but I never believe a word they say. Cheers to you both from Aus Land

      @@darrendwyer9981 The theory might match his reality if he's growing determinant tomatoes, and they all come on at once. As for vine ripening, it might make a difference to a more sensitive palate, but maybe I'm a little too impatient to wait for them to turn full red. It's all a moot point here in Iowa. Our high for today is 21 F, with an overnight low in single digits. I'm experimenting now with growing spinach and kale which I cover with a plastic sheet in winter weather. 'Growing' is probably the wrong term. 'Maintaining' would be more accurate. They're now growing, but they're not frozen to death either, even though the soil they're in is frozen solid.     Caprese salads are great. I also love a fresh tomato sandwich. Light to medium toast on the bread of your choice. Spread with a nice creamy butter and your favorite Mayo. Freshly sliced homegrown tomato. It can be as simple as that or add Bacon and lettuce for a classic BLT!🥓🥬🍅😄👍

    So, if you go a few days without water in order to get the best ripe tomato, what about the other ones still on the vine? Do you water heavily right after picking the ripe one(s)? I’m concerned that the whole plant will die if I go without watering for a few days. Loved the salad demo!!!

      I am concerned about the remaining ones cracking from being dry then suddenly watered.

      I definitely would not water "heavily" . If the tomatoes are still green it might not be a big problem but if they are a bit ripe you will get cracking. I personally would water half as much as normal and work back up to your normal schedule. This is just imo.
      I'm sure he will do a follow-up with all the comments on this subject.

      Also unless your plants are in pots four days is not that much of a problem.
      I think that the days needs to be adjusted depending on where you are growing.
      Maybe 2 days for pots, 4 days for raised beds, and five or even 6 days for in ground plants.
      Again this is just my opinion.

      If you have deep roots and water deeply regularly they won’t crack. I had a tropical storm dump over 10 inches of rain and none of my tomatoes cracked.

    greetings from Ontario Canada... things are just "starting" to ripen up here after a hot dry July... always had problems with black rot on the bottoms of my tomatoes but i think my watering and soil quality are much better thanks to your tips... fingers crossed. I planted a few in my flower beds which have much better soil quality.

    Was down from Sacramento to Faria Beach last week for vacation. Took 17 pounds of tomatoes. 6 of us pretty much ate them all.😋My favorite way is toasted sourdough bread, avocado, sliced tomato, s&p. Yum, yum.

    My favorite thing to make with my tomatoes is spaghetti sauce. It puts me right to sleep after I eat, that's how you know its good! I've got cases of different sizes of canning jars on hand ready for a bountiful harvest. I live in northern Minnesota where there is a good 6+ months of winter, so my garden window is short, so I plant heavily and can about half of everything.

      I live in northern Minnesota too !!! My daughter just moved up from the cities and bought a home on 46 acres, she wants to raise organic produce. Yesterday we were talking about gardening and I said, “I can’t believe I moved to the coldest spot of the US because I love to garden, even a lot of Canada is warmer than my zone 3” 😟
      I live between Park Rapids and Bemidji, 7 miles from Itasca.

    I love a strong tomatoe taste. I pick them before they get totally ripe and let them ripen in the house. I used to think they had to ripen on the vine to get the full taste. But when I had to start picking them early to get them before the critters I found out they taste just as good as long as you wait till they have some orange color. My favorite recipe for tomatoes is a salt shaker.

    Your salad looks so tasty! Try adding avocado to it or just use avocado if you are out of mozzarella. Either way, I agree, use the balsamic vinegar! Either version is also nice served up in a lettuce cup.

    Some of my favorite recipes for fresh tomatoes; Make a pan of white gravy and layer some of it over a sliced, vine ripened tomato... mmmmmm so good. Or A sliced, vine ripened tomato between two pieces of white bread that are coated with mayonnaise. Sometimes I add bacon, minced fresh green onion and smoked gouda to the sandwich and toast the bread. I'll be trying your recipe for sure!

    Yummmm that looks so good. And I do eat them like you do. But my favorite way is with a little salt on a vine ripped tomato! And I never put them in the refrigerator. That's a great tip that I also share with family and friends. Thanks for sharing.

    Good vid as always. I make a simple salad, using diced tomatoes, diced onion, diced cucumbers, with mayo dressing. S & P to taste. It has surprised many whom I fed it to over the years. Even toddlers loved it, which surprised me, what with onion in it. Thanx again, Brian. You help make our day.

    It is good for me to learn more on how to do my patio garden here in New Westminster, BC, Canada.
    I planted a few beefsteak tomatoes in a pot and now I can see, flowers coming from the stems, I cut some of the lower leaves already and I will watch the fruits grow......
    I am into gardening, I hope I will be able to live in a house with a backyard so I can do, a bigger garden to plant my vegetables, fruits, ..etc....

    But what do you do when there's other tomatoes on the same plant that aren't that far along - they are still green or are orange? They're going to be adversely affected by the lack of water, aren't they? How do you help them recover?

      Although I guess if the plant has already set all of its tomatoes that it's going to you won't have to worry about blossom end rot. The only thing I can think of that's going to happen to a plant that hasn't been watered.
      Though also I figure he's probably done this for more than one year. It's not his first year. Not his first rodeo lol. Maybe he'll do a follow-up video.

      @@monikav4614 I commented on another post on this subject. I feel like he will do a follow-up because I read several comments expressing concern.
      I believe the days of thirst could be adjusted to suit the growing style. Less days for pots and more days for in ground.
      Also after you restrict water from your plants you don't want to come in and drown them trying to make up for missed water. Ween it in reverse... If not you may end up with split tomatoes.

    Brian, love your sense of human! This is super helpful for me because I am a fairly new gardener and was wondering about when is the best time to pick the Tomatos. Love the recipe too. The tomatoes are whining cause they aren't getting wattered. Lol! The rewind, etc. You are not only wise, you are engaging! Thank you!

    Love Caprese salad. For a wonderful balsamic try taking a large bottle and reducing over medium heat for a couple (few) hours until it's syrup thick. It's a quick way to make it taste like a balsamic that's been aged for 50 years...almost.

    My absolute favorite tomato recipe is the Gordon Ramsay grilled tomato soup! Tomatoes, Basil, Onions and some thyme. Everything drizzled with olive oil, sprinkled with salt pepper and sugar, put it to roast and when everything is caramelized and nicely roasted, blend and pass it through a strainer, and voila! Ready and delicious! I always prepare a ton to make in preserves for my winter soup stock though it’s also divine as a cold soup! :D (I may have forgotten something from the original recipe but this is how I make it and it’s delicious! 😋 🤤 ) thanks again for the video! Everything was nicely explained and I learned something new! I didn’t know that tomatoes could loose flavor in the cold! And that if you don’t keep them in the fridge more than four days the flavor can come back! 🤩 So fascinating!!!

    I have everything on hand except the balsamic. Adding that to my grocery list now! Tomatoes and basil are 100% the flavor of summer.

    You bring garden happiness to the gardener masses. Love the caprese salad reaction. I think that your channel expansion should include these "foodie" moments. How about Organic Gardening TV as a name suggestion...not limiting geographically, and can include your expansion into ornamental plants. Love the garden tours that highlight some of your vertical growing structures. Saw a video a couple of days ago that highlighted some purple pole beans...but didn't catch the name? What variety? Love your positivity... you are a welcome view in this period of isolation.

    This video was very helpful regarding how to know when to pick tomatoes. So, thank you. Quick question...you said you stopped watering for 4 days to ripen that red tomato. Do you do that every few days to let the other ones ripen and then put the water back on to get the needed water to the other tomatoes? Am I making sense? 🙃 Also, I keep forgetting to tell you that I love the intro jingle you have! Keep on growing!

      Karin Cooper yes you are making sense to me anyway. I was wondering the same thing. Tomatoes ripen at different times on the plant so how in the heck are you going to choose which ones to stop watering. Once chosen, won’t the lack of water effect the less mature ones on same plant. Im going to forget this piece of info as it seems too pedantic to me.

    I loved this video! Great info with a recipe and humor thrown in. I’ve lost all my squash to vine borers, am battling Japanese beetles on my okra, squash bugs on the cubes. My tomatoes, however, are doing great so far thanks to your tips. I did only container gardening this year. I think I’m only going to do tomatoes next year if I get a decent harvest. I’m tired of battling the pests with living on wooded acreage. I’m keeping birdbaths near by in hopes squirrels and birds will leave the tomatoes alone. I’m putting plastic forks (tine side up) in the dirt at the base of the plant to hopefully keep squirrels, possums and raccoons out. So far so good. I planted late so I’m just starting to get some tomatoes showing up. One was nearly ripe on a volunteer tomato from last year’s garden. I picked it and brought it in with still a little orange on it to make sure none of the animals got it. It will probably be ready in a day or two. I can’t wait to try the Kellogg’s breakfast tomato you recommend. I’ve never had them. So far the plants are doing well Can’t wait to try your recipe and to also have a big “mater” sandwich with mayo!!! Thanks as always for all your hard work!!❤️

    I'm a big Caprese fan, but my FAVORITE tomato recipe is actually a green tomato (as in unripe) and apple crisp with hazelnuts in the crisp. I throw in a splash of bourbon too :-). Great way to use the remaining green ones in the fall.

    Hi Brian,
    When we have loads of beautiful sweet tomatoes from the garden, we
    1) chop the tomatoes into quite small pieces in a bowl,
    2) add dried basil and chopped fresh basil, like you do. The dried basil does NOT spoil it, only enhances the fresh.
    3) Then add quite a bit of salt, a bit of pepper, stir and let marinate for at least 10 mins.
    The juices will run and create it's own dressing with a perfectly balanced taste.
    4) Add olive oil to taste
    Important Then eat this salad with a spoon!
    It is like heaven when using sweet garden tomatoes. I'm a garlic lover, but adding this and/or vinegar seems to spoil the experience.
    I must try it with the mozzarella balls sometime, although we cannot obtain these in the UK in quantity like you are able in the USA. Sounds like a great alternative to try.

    Great video and loved the recipe! I can't wait for my tomatoes to ripen up. Could experiment with adding avocado, shallots, and/or capers. The Balsamic does make it sing.

    I mix onion powder, garlic powder, dried crushed basil, salt, and pepper in a salt shaker take it out to the garden pick ripe tomatoes, and shake my mix on them while eating them like apples.

    Oh you son of a gun. I had to tell the wife, run outside and pick some yellow tomatoes grab a few mozzarella balls (not in the same oils but still as good) and rip off some basil and try it with our red wine raspberry balsamic vinegar sauce! 🤤

    OK, one big question. On our tomato plants we'll have maybe 10-15 tomatoes at a time. Some are ripe, some are halfway there and some are budding. If we cut the water off for 3-4 days before picking, what does that do to the younger tomatoes? Don't they need that water? And PS, I freaking love your videos. Thank you so so much for sharing.

This was a fun & informative video, which I will share it with my son who is house-sitting and tending to my garden while we help out with the new member to our family. He's wants to know when the tomatoes will be ripe, and recipes are always welcome. He's eager to try planters on the roof of his apartment, too.

    Hi Brian , I have to laugh . Just before turning on your video I prepared my lunch. It consisted of a garden ripe tomato , Just picked Basil, garden fresh garlic - home grown dried hot pepper, salt, olive oil and sharp Italian provolone.     Basil confetti AKA chiffonade . Your knife skills are fine. Also the mozzarella salad has soybean oil in it. A real flavor killer.always marinade yourself it is worth the effort. What I like to do is make a salad with really juicy tomatoes. Bring home a French baguette and soak up all of the juices from the salad, you’ll think you’ve died and gone to heaven!!

    Hi Brian! In a future Tomato Tuesday video, could you address three issues I’ve had this season - how to support large clusters of tomatoes that are breaking the branch before they’ve ripened, causes of “butt” shaped tomatoes (sorry, can’t think of any other way to describe them ;) and tomatoes with a ring around the bottom (not blossom end rot, just a scar like ring). Thanks!! Can’t wait to try this recipe - looks delicious!

      Depending on how you're supporting the plant (trellis/stake/line) you could tie a bit of rope into a sling around the branch and main support. Lift the branch gently to test how much give it has and estimate the distance between 2 sets of leaf nodes on the branch where the rope will wrap around, and your main support. Multiply it by 2 and add an additional 9 in.- 1 ft. of rope for adjustments and a knot. Make sure the sling is loose enough for growth. the branch should rest in it and still have some upward give. As far as funny shaped tomatoes, if they appear different then they are intended for that variety, it could simply be deformed or a mutation if the tomatoes are healthy other then that. If you notice a scar running down the "crack" then it could of been caused by an overabundance of water after a period of drought same with the ring scar around the bottom. If you are watering regularly, you may want to up the phosphorus during feeding time.

    I think it is personal preference when to pick them I love green fried tomatoes but I also picked my tomatoes right when I start seeing a hint of that yellowish reddish color and I let them finish ripening indoors. Plus I have a grasshopper problem 😂

    I like to put my cherry tomatoes on a toothpick with a basil leaf and one of those mozzarella balls, then drizzle with balsamic vinegar. They make a great summer appetizer! I also add a quarter slice of thin salami and skip the balsamic for the meat lovers in my family.

    Wow that salad looks amazing and the tomatoes well they are brilliant my tomatoes are just on the edge of the orange colour but a couple of them did actually fall off. And they have ripened where I left them near the plant base not indoors just outdoors near the plant they should be okay to still eat those once they ripen what did they have the tastiness is a different matter what do you think 🤔. 😊

    Love Balsamic vinegar but after reducing it by boiling it to 2/3s. It's so much better and great on icecream!
