    Great presentation. Remodeling our kitchen without the necessary power source found us looking at a bit of torpedo of costs for this necessity alone. And those power outages here in So. Cal made up our minds...we 're sticking to gas. Keep up your good work.

    Thank you Steve. Much appreciated on this video. I am one of those that is choosing and both are expensive to buy, with induction being particularly expensive for existing homes because of the 40 to 50 amp, 240v systems needed, where gas still uses 120v 15 amp circuits. I really wish I was in Boston to get first hand help but I am not so thank you again for an informative piece.

    Your links for the two products in the description are flip flopped. I think I’d rather buy both a gas range with an oven in addition to a separate induction cook top for the price of the one that has both. 😇 We are nowhere close to you guys, but truly appreciate all the information and tips you put out on YT! I plan to refer back to your kitchen planning tips before we go to our architect for our house plans. 🏆

    I am buying the Induction, because all of my cookware is Lecrueset, Lodge, and All Clad. They are all compatible. I grew up with the reliability of gas, and I was finally about to buy my first gas range until I started my research. I do remember the yellow residue on the walls of homes in the 70s and 80s that had gas ranges. I just can’t deal with that as an individual who has asthma. Furthermore, my fiancé was hindered from closing on a home a couple of years ago, because one of the inspectors forgot to turn off the gas after the inspection. Consequently, the gas filled up the vacant house and it exploded. I guess I will have to get my flamed high solely from my Big Green Egg. 😢

    Another great video. We recently replaced a traditional electric range with induction and love it. For new builds or those with access to add a gas line (we did not) maybe gas is the choice but if you have electric service this is a no brainier.
    I thought I read induction is more efficient than electric element as well. Maybe I’m wrong.

    We just bought a new construction and we decided to add induction. The GE Cafe double oven induction.

    I upgraded to induction but soon missed not being able to use various pots. I don’t care about aluminum but just discovered interest and benefits of clay pot cooking.

    I would like comparisons with electric cook tops. I have electric and can’t keep the darn thing clean. I asked about pacemakers as I’m 75 and never know if they might be in my future. My Dr said new pacemakers are shielded enough to even go in an MRI. You need to ask what kind you have.

    My preference is gas. But here where I live in San Antonio, TX most (but not all) new subdivisions are developed without gas mains, so houses are all electric. In a situation like that I would gladly take an induction cooktop over the old exposed coils or even the radiant coils under ceramic glass. Sometimes, I think that even if I had a gas hookup, I would go with a 30 in induction cooktop and just one gas wok burner. I know that it's possible to use a wok on induction, but there's something about using a gas burner with a wok that just can't be beat.

      Perhaps.....Induction does work with a trivet, but gas is a bit more familiar

    I just received 36” wolf induction, it’s horrible, no power, one burner doesn’t work, the big burner has no power all burners has an small coil works only with small pot, I hope the stove is defective and not all wolf induction are this bad

    What is the monthly cost difference between gas and induction roughly. If induction is more efficient at cooking will that make its operating costs lower than gas even with its higher Amp needs. Love your channel, always look to your expertise before deciding on anything.

      Good question! Induction uses more power but is ore efficient in doing so.....

    Are combo ranges a thing? Some induction burners and some gas or radiant electric burners?

      Yes, they are becoming more popular in the professional space for sure. SKS, Thermador, La Cornue and Fisher and Paykel all have combination tops in their lineups!

    Thanks for this. The issue I'm keenest to find out, though, is about cool spots on the periphery on induction. I've seen videos that show that induction only heats the area directly above the coil, so while boiling or simmering works OK, sauteing or frying on induction can produce an outer circle of raw food. Could you comment on this please?

    Another great video. Are there any concerns with large diameter pans? I have heard that the induction coils can be smaller than some the larger diameter pans and the edges might not heat up as well on the edges.

    What’s an appropriate amount of venting flow for a 30” induction range? I’m planning a new kitchen with the cafe induction range and will have a hood over the top. I have baseboard heat, so adding in makeup air is not an easy proposition. What do you recommend?

      Depends on how you cook...But you can be ok with a 400 CFM and not worry about Make Up air regs...However, you should keep windows open and consider an air cleaner if you cook a lot.

    Until the electric grid is 100% reliable 100% of the time, you need some way to cook or at least heat food when the lights go out.

    Why no mention of pacemakers -- I hear that induction cooktops cannot be safely used by people who have an implanted pacemaker. I have seen on one induction product website "make sure you stay two feet away." Huh?

      There are too many unknows with pacemakers and manufacturers are not doctors so they all tend to be on the safer side with their language (for good reason). The truth is there can be interference so we usually tell those customers to look in another direction.

      Good question…induction is much cleaner than gas, creates far less fumes of carbon dioxide, nitrous oxide, etc….however, an induction range will use 50 amps versus 12 for gas.
      Multiply that times the millions of homes and you need more power and electricity and power to run it
