Great job chef !! A tip for those that aren't aware, you can freeze that compound butter for use at a later date. Just cut off what you need and don't cross contaminate the butter with the chicken before refreezing, if you don't use it all at once. Love your cooking style Rik. -- den
Gabby if the chicken plug does not want to stay in you could always stick the old cocktail stick in over the plug and it will seal - just make a big enough pocket inside by wiggling th e knife inside - love Chicken Kievs. Best, Rik

Brilliant Rik, one of my favourites that I’ve missed here in thailand, I did try one version in the Organic Coffee Bus but wasn’t anywhere near what it should of been.
