  • In this video we show you how to fillet and clean a saltwater hardhead catfish! These guys are often regarded as trash fish, but if you take the time to clean them properly and remove the bloodline they are delicious!!

    I wanted to add …if you catch them from muddy rivers like I do …a deep sea fisherman gave me a amazing tip ….he told me before cooking the fillets soak them in vinegar for 2-4 hrs before cooking ….it will take out 99% of that mud taste so you will be left with a nice fish fillet …it will also be like you put vinegar on the fish so if you like vinegar and chips that’s a bonus! A lot of people knock hard head catfish here saying it’s crap fish …it’s actually not bad if you prepare it properly beforehand…tasty fish :p (more for me hahahaha the Mary river here is absolutely packed with them )

    Awesome videos, awesome knives. I've actually had a Dexter fillet knife for quite a while. Didn't know you guys had a channel! I was looking up how to clean one of these hard heads and picked this video. I was using my Dexter already and immediately recognized your knife! Only then did I realize why 🤣

    Nice knife skills.. I still cut out the reddish bloodline in a "V" shape. Especially if you're not cooking it that day.

    Soak the fish overnight in buttermilk, one egg and beer of your choice. Wait until you see the meat the next day.

    That's interesting everyone I've talked to says you're not supposed to eat those hardheads😳
    But that looks like a normal catfish to me

    I ordered these Dexter knives two separate times based solely on Landshark. I ordered an assortment of 6-7 knives to try out the lineup.
    Both times the Dexter knives were very poorly ground with rough grind marks and rough, poor edges. The sheath/guard was also very poorly made. And I mean poor as in, the grinding wheel continued to grind past the edge and into the part of the blade that attaches to the handle.
    The knives are not cheap either.
    It's a shame that an American company like Dexter produces such mediocre blades.

    Ive never heard of hardheat catfish. So its a saltwater catfish that can be caught in brackish and fresh water?

    If you skin the fish before flaying you save a lot of time. This is true with all catfish. You can even peel the skin off in strips on the larger ones! 👍

    Love your videos man! I'm a big proponent of Ikejime dispatching but can't find any resources on how to do it with cats. Probably because their heads are hard and might slip and barb yourself... I've been wanting to take one of the bigger ones I land from the Tampa channel home and cook up but I'd like to kill it on the boat. Most species require the fish to be in whole condition but Cats are part of the unregulated species and I cant seem to find if that means they must be whole too or if I can cut the tail off on the boat? Is there any reason you don't cut the fins off before processing? Is there an possible toxin leak issue? If you or anyone else can assist I'd be much appreciative!       I eat them all the time. Stupid easy to catch a mess of them and easy to clean. All catfish taste the same to me dont notice a difference from any freshwater cats.

    Does the catfish have to be alive to bleed it? Will it still bleed it out if I kill it first? I prefer being as humane as possible.

      I have researched this so much for saltwater cats and can't find any resource that says cut the fins off but that's my initial instinct to avoid getting barbed. Do you know if there is a reason people don't do it? Do the toxins run out or something or is it perfectly fine to cute the dorsal and pecs off ?

      @@papazig911 because they dont know. Just knock a wood on the barb, when sharp part is in the wood, twist the wood to break it. The venom is in slime, the barb is just making a deep wound that has small backward spike to worsen the wound.

      Either you've never tried them or you cooked it wrong, they're fantastic! I usually keep these guys when I catch big ones and people always ask why and say you can't eat them. If they only knew lol
