These 1hour beginner crash courses are pretty nice. Honestly, you are very good at teaching. You explain everything without over-explaining. This makes it easier to get an idea of what the code you're typing does while keeping the whole video entertaining. I'd like to add that I think unique junior projects like these, or ones just a little bit more complex that apply to real-world scenarios, could be great.
Thanks so much for the kind words! While I try not to over-explain, I do think I move quickly and demand a lot from the viewer. My videos tend to be a bit beyond a simple 'hello world', so if you like the pace, that's an indication that you're pretty smart yourself. As for building a more complicated app, that's completely my intention. I want to go through the basic Spring projects and technologies with the fun Rock Paper Scissors App, and then do something with a bit more teeth as I pull it all together in something that should confuse and intimidate just about everyone. This one ends on some Spring Data API stuff, so it really is a whirlwind tour. Even JavaScript client hitting the REST API. It's a very advanced tutorial!

I like your explanations, but I find it hard to watch the video because the embedded subtitles distract me a lot. I struggle to concentrate and would prefer to be able to turn off the subtitles. It would be better if they weren't embedded.

I agree. I stopped adding them to my videos after experimenting with them for a bit.
