    Good explanation of the difference between the two types of professional ranges. The ease of cleaning is one big factor between the two.

    If you want a commercial oven in your home it is simple and shall be done. It is so ignorant to say, "In a commercial oven the pilot light stays on all the time." That is up to the ovens owner when the pilot gas is shut off or turned on and lit. It's an oven wether commercial or homegamer grade. It doesn't make decisions or have a personality it is just a kitchen tool. Do you know the difference between the "rigors of commercial duty cycle" & "narcissist kitchen employees abusing fine tools"? They are two different things. Just keep firing the employee who bangs the equipment around the loudest and stop pretending a 24/7/365 use of homegamer equipment will burn it up in 1 year beyond all repair and hope. How many times this guy burned his arm the same way everytime on the same oven door? If you want to attain enough consciousness and self awareness to not walk in to the same oven door repeatedly then start by not corrupting your own mind with creative lying to sell homegamer appliances to customers which you are trying to brainwash with false facts. Just by using toes instead of fingers to close an oven door doesn't equate to the door will break. That is not a fact of life. You can't leave out factors and arrive at facts. LEDs do not break merely due to existing within a commercial kitchen. The real reason commercial ranges don't have LEDs is because you don't walk around a commercial kitchen with all the lights off like you may do at home in the middle of the night. So LED lights are not on commercial ranges due to there is no need for them in a commercial environment not because they would break. Commercial buildings are known to be well lit with lighting so work can be done. It is very possible for a homegamer to completely educate themselves with kitchen appliance knowledge and natural gas etc. and venture forward with buying an oven and range worth as much as a luxury car and properly installing it in their home kitchen following all best practices and regulations if one so chooses to do. I am from the Old American tradition of freedom and liberty. The right to voice critical thinking for those who lack it or had it replaced with ego, social contagion, status quo or any "job security" type of deception. This guy wants to sell you the Viking because it's the biggest ticket price on the floor. He doesn't want you to buy from a commercial supplier because then you'd be all set never needing to buy temporary appliances from him again.

    Do restaurants constantly have the pilot light on? If all I'm looking for is a high-powered range top, are there any that don't have a pilot light that's constantly on?

    Completely worthless.point of view of someone who wants to sell you something. All the "features" you highlight in high end home units are all drawbacks. The reason why commercial units are awesome and don't have all those other "features" is, restaurant owners don't want their service to be interrupted by a cheap 10 cent part breaking because the manufacture has built in obsolecence.
