Ingredients:
1 cup wheat flour
1/4 cup grated coconut
2 tablespoons jaggery (or to taste)
*1/4 teaspoon cardamom powder
A pinch of salt
Water, as needed
Banana leaves (cut into square or rectangular pieces)
Instructions:
1. In a mixing bowl, combine wheat flour, grated coconut, jaggery, cardamom powder, and salt. Mix well.
2. Gradually add water while stirring the mixture until it forms a smooth and slightly thick batter.
3. The consistency should be similar to that of idli batter.
4. Take a banana leaf piece and lightly grease it with oil to prevent sticking.
5. Spoon a small amount of the batter onto the greased banana leaf.
6. Fold the leaf to enclose the batter, forming a small pouch. Secure it with a toothpick if needed.
7. Repeat this process for the remaining batter.
8. Steam the prepared kolukattai pouches in a steamer or idli cooker for about 10-12 minutes or until they are cooked and firm.
9. Once cooked, remove them from the steamer and let them cool slightly.
10. Carefully open the banana leaf pouches and serve the kolukattai warm.
