- Ingredients:*
- Refined flour: 250 grams
- Yeast: 10 grams
- Granulated sugar: 10 grams
- Salt: 6 grams
- Olive oil: 10 ml (plus extra for greasing)
- Garlic powder: 1 tsp
- Mixed herbs: 2 grams
- Chili flakes: 1/2 tsp
- Oregano: 1/2 tsp
- Olives: 2 tbsp, sliced
- veg ...mix bell peppers,onion
- Sea salt: to sprinkle
- Water: 150 ml + 50 ml (divided)
Method:
1. Activate Yeast: In a small bowl, combine the yeast, granulated sugar, and a little of the 150 ml of water. Mix well and let sit until frothy, about 5-10 minutes.
2. Prepare Dough: Sift the flour into a large bowl and make a well in the center. Add the yeast mixture, salt, and the remaining 100 ml of water. Knead until smooth and elastic.
3. Incorporate Flavors: Knead in half of the garlic powder, mixed herbs, and olive oil. Continue kneading until well combined.
4. First Proving: Transfer the dough to a greased 8-inch tin. Spread the dough evenly. Cover and let rise in a warm place until doubled in size, about 20-30 minutes.
5. Prepare for Second Proving: After the first proving, gently knock back the dough and press your fingers into it to create dimples. Sprinkle the olives and vegetables over the top and brush with the remaining olive oil. Add the remaining garlic powder, mixed herbs, chili flakes, and oregano.
6. Second Proving: Cover and let rise again until doubled in size.
7. Bake: Preheat oven to 220°C (425°F). Bake for 25-30 minutes, or until golden brown. If the top browns too quickly, switch to baking with heat only from the bottom for the last few minutes.
8. Finish: Remove from oven, sprinkle with sea salt, and let cool slightly before serving.
Tomato Basil Soup
Ingredients:
- Tomatoes: 4 large
- Onion: 1/4 cup, finely chopped
- Garlic: 1 tbsp, minced
- Basil leaves: 2-4 leaves
- Black peppercorns: 1 tsp
- Sugar: 1 tsp
- Salt: to taste
- White pepper powder: to taste
- Olive oil: 1 tsp
- Water: as needed
Method:
1. Cook Ingredients: In a pressure cooker, add the tomatoes, onion, garlic, black peppercorns, and enough water to cover. Cook for 3 whistles and allow to cool.
2. Puree: Blend the cooled mixture into a smooth puree.
3. Prepare Soup: In a kadai or large pot, heat 1 tsp of olive oil. Add the tomato puree and bring to a boil.
4. Season: Add sugar, salt, and white pepper powder to taste.Stir well.
5. Finish: Tear and add the basil leaves. Simmer for a few minutes to meld the flavors.
6. Serve: Adjust seasoning if needed and serve hot.
Serving Suggestion: Enjoy a slice of the Tomato Basil Focaccia alongside the Tomato Basil Soup for a comforting and flavorful meal.
