Actually, I had read somewhere that Indira Gandhi had called Ramesh Sippy, and advised him to change the ending so that people have faith in judiciary. This was sometime after the emergency was imposed. Apart from that, some other deleted scenes included the scene of Sachin getting killed by Gabbar, which was removed since it was too graphic.
No wonder I dont remember Gabbar surviving in the end... I watched Sholay in the TV years ago in Malaysia, the movie actually ends with Thakur killing Gabbar. Probably, the film makers didn't have problem selling the film with original ending in the international market back then. But I swear my mum said when she watched it as a little girl at her town in India, the ending shown in the theatre was the original one where Thakur ended up killing Gabbar. Huh....
I think the police could hold him this time. Thakur had injured Gabbar's hands so bad with those spiked shoes, that Gabbar probably would not be able to use his hands again. Also, most of Gabbar's gang was either dead, or in prison, and the terror that Gabbar had imposed on the villages was crushed due to the defeat of Gabbar, not by the police but by two regular people. Not to mention that Gabbar would be liable for the death penalty or a life sentence this time around because he killed Thakur's entire family, and Thakur would testify against Gabbar at this time.

This movie had a director's cut, and that was a bit more explicit in violence in terms Thakur's family being killed. Also, the biggest difference is that in the climax, Thakur is the one to kill Gabbar with his sandals.
