I'm pretty sure it's from the previous ice cream like hannah said. It's time consuming to clean it every time one ice cream roll is made when there are many customers waiting outside.
Maybe it's from the previous ice cream, but if the person is allergic to chacolate or whatever ingredients from the previous ice cream ? It's dangerous and not professional.
It bothered me that they didn't fully clean off the surface from the last batch before they made the green tea rolls...and they even got some of the previous flavor in the green tea. Plus, they did a poor job of cutting the tapioca pearls before they smoothed it out to make the rolls.

why do people say its disgusting that they didn't clean the board? It's just ice with a little chocolate. Or what i assume is chocolate flavour. And it's not like they used the whole entire board which is why they didn't feel the need to clean the whole thing. Wow i find it strange how many people actually want them to clean the cold plate!! I mean if u can think at least for a second, u wud certainly understand the immense energy requirement to cool the cold plate to that low temperature, and then how can u wash it! U will have to bring the temperature to normal for washing or else water will freeze. and for making ice cream should they freeze the platform again? Thats pure nonsense! These people doesn't deserve a ice cream roll.

普通のアイス屋でも丸くするやつ(あれの名前なんだっけ？)毎回洗わないで縁の丸くするやつ入れに水張っていれてるしそのなかで前のアイスの味つかないように洗ってるけどあんまりあの水忙しいとなかなか変えられないから、その水にもいろんなのまざっててアレルギーの人がアレルギー反応出ることもあるからさ…結局おんなじもんよ。こっちの方が確率は高いけど
