      Right!! The onion is nice, but it doesn't taste much of anything. These though are just so good with anything. I think I might love cabbage since I've never had a cabbage salad I didn't like.

    I stumbled on your 5 sauce’s video about 3 weeks ago then started planning a Mediterranean bbq party based mostly on recipes from your channel. Several of us selected which recipes we would attempt to make. We made chicken shawarma, tahina, spicy sauce, kafka, lamb kabobs, hummus, tabuleh, babaganush, and some sauce I forgot. Everyone loved it and the food was amazing. This is my favorite food channel

    Tip for the wire rack: Make sure it's a stainless steel rack and not a non-stick or coated rack of any kind. I used a non-stainless once accidentally and the coating cooked off onto the chicken.

      Oh good point, I had never considered that. We have a few coated ones which are usually called Cooling Racks, for cakes and the like. Definitely don't use those to grill on

      I have a brother, son in law, 4 nephews who love to cook and are amazing at it. They cook everything from Palestinian Minsaaf to any other ethnic food like Italian, Mexican, Japanese, Latin, Chinese, and Polish foods from scratch

    Yes the chermoula goes extraordinarily well with fish especially, the chermoula chicken sandwich reminds me of when our moms would go to weddings and bring home some chicken mdeghmer in some bread ugh the BESTEST memories.     I make similar red cabbage all the time, usually without sugar and with any citrus/vinegar I have around, might depend bit on dish. It's awesome for tacos, kebab and really all kinds of stuff. But overall, it's best for some kind of sandwich, using term loosely here to mean wraps, burgers, flatbreads etc.
    It's basically my favorite vegetable and in terms of pure quantity it's one I eat most. Well, I'm not sure if it's my favorite, but it's one I like to use most. And yeah, I also have pickled red onions ;D
    Just try tacos with it, or some random pita kebab concoction, just today I ate some pita with chicken, tzatziki, red cabbage, tomato, onion and sriracha. It was honestly almost the same as one in the video.

      I agree, it's such a good topping. Sugar, vinegar, citric acid and the olive oil are all optional, we have made it with and without them before, but I find they tend to make it a bit more flavourful and salady... Awesome stuff

    Made this tonight. For the bread, I used your pita bread recipe, and it was fantastic! The grilled chicken, the pickled cabbage, the fresh salad and garlic sauce -- it all works together so perfectly. I would say that it was the best sandwich ever, but I made your falafel sandwich last week, and of the two, I'm not sure which was better. I love your videos, really well done and easy to follow!

    These sandwiches are incredible! But I’m going to make them as salads. So I’ll use the spreads as salad dressings. But I WILL use some kind of bread appropriate for soaking up all those flavourful juices. Obi, your marinades are to die for. And I’m impressed with how you transform simple tomato-and-onion-based salads into delicious yet different parts of the sandwiches. One ingredient that I use on most of my dishes is missing, though: caraway seeds. I will probably add some to each sandwich salad, or at least to a portion of each dish, and see how I like it. I also love roots, like celery and parsley roots, as well as parsnips and turnips, so I’ll be experimenting LOL 😊

    Tips for Americans with electric Ovens: Just set the Oven to "Broil". Setting your oven temperature to 250 degree Celsius as mentioned in the video will turn off the Broiler and you will end up will cooked pale chicken instead of the nicely charred chicken in the video.

      There was a chain of sandwich places called Wrap It Up, that used to do awesome sandwiches closer to Middle Eastern and South Asian flavours. Their stuff was good for lunch grub and they had quite a few branches... I wonder if they're still around.

    Im gonna recommend another version of the red cabbage. U add the citric acid and the salt and let it a side for 10-15. Then you add Tahini and lemon juice and mix. I eat it along with fish and chips. Love your sandwiches looks bomb.

    I see you have a stain warning for blenders. But how do you prevent your mortar from becoming stained? It is porous, white stone so you'd think saffron broth would stain it

      Not sure really, this is already a bit stained but it mostly cleans out. I usually use a brass one for saffron, but on video it doesn't look great. The issue with blenders is they live on your counter so if they get stained, it just doesn't look nice.

      Showing different methods of cooking the chicken. Either one works, or you just bbq it. Pan frying works too

    This is just my opinion, but if you toast the bread a bit in butter, or even garlic butter, it enhances the taste of the sandwich. At least it does for me because I love my sandwich breads to be toasted

    Can the marinades be prepped and frozen with the chicken? To make a ready to cook meal or will the flavor change?

      Not an expert, but I specifically do this all the time. I buy chicken thighs in bulk (Sam's club, in the US), divide them up, and freeze them in separate marinades for use in the coming weeks. I've never had a problem.

      Oh yes, plenty of them. In fact it comes as a surprise to most British folk that it did indeed originate (as we know it) in Germany. But yes a very popular : I just did a search and there are 27 doner kebab vendors within a 3 mile radius of where I'm sat :-D (obviously - and before anyone else says it - Turkish doner kebabs originate from Turkey and they are a little different but the style and presentation and popularity has its roots in the German model)
