    This recipe is a winner! Love it! Thank you! The amount of beans and water worked just right! Used the quick soak method and no mushy beans. The flavor is exactly the Chipotle taste our family enjoys. You were right… we love them!

      I have made these twice now. I do substitute chicken boullion for the salt. But otherwise follow this exactly. My family loves them and I cant keep them in the pantry

    Instead of the chipotle peppers, could you use chipotle sauce instead? That way you have more control over the heat?

    I made these last month and we’re running dangerously low. I will be canning more in the next couple days. This time, I am going to purée the garlic and the chipotle’s and adobo sauce and divide evenly amongst the filled jars. I think this will allow a more even distribution of the chilies and garlic. My chilies were sitting on top of the beans when I opened the jar. Excellent recipe. Thank you.

    Thank you. Whenever I'm looking for canning recipes to compare or just get an idea of how I want to do things, I can always count on you to follow approved methods. That means a lot and it sure saves me a lot of time wading through all of the fly-by-the-seat-of-their-pants canners out there....lol

    I have been wanting to make these but I'm unable to find any black beans due to "hording" because of the CV19. I found an 8 lb bag of pinto beans and was wondering if I could substitute those for back beans. Thanks!

    I made 28 pints of this yesterday! I have a daughter in college who loves Mexican food and hopefully she will be going back to college (darn pandemic). She has a condo and she will live off of these and brown rice! I wish I could send you a picture. I haven’t tried them but the house sure smelled great. Btw, that was 10 pounds of black beans.

    I am having trouble with jars breaking due to the cranking the heat to high as oppose to gradually increasing the heat. This takes much longer. Any suggestions?

      Dena McVaney hi! Thank you for the compliments 😊. That is interesting. In all the time I’ve been canning I’ve never had a jar break but I’ve had others ask me the same question. Forgive me but I have to ask, you have a rack in place right? Are you starting with hot jars? Thermal shock is a common reason for jar breakage. Are you using old jars or thrifted jars? The life expectancy of a canning jar is about 10 years. Are you reusing jars from commercially made food? These jars are not the same as ones specifically made for home canning and are not recommended. Chips and cracks can cause a problem also. So always check your jars before you fill them and don’t use anything metal for debubbling. Proper headspace is also important so try to be as accurate as possible.       Canning jars are meant to withstand a lot of heat. I can’t imagine it’s just from cranking your heat to high to get things going as that is a standard practice and what’s recommended by the National Center for Home Food Preservation.
      I hope this helps you troubleshoot. How disheartening to put in all that work just to have broken jars. 😞. Thanks for watching and supporting my channel 😍💕

    Hi Carol, I have a Presto pressure canner and I am canning this recipe today. I made a larger batch using 12 pint jars. Is it ok that my top rack is not full? I’m processing now and should of ask before doing so. Some people put jars of water in the empty spaces. But I didn’t think of it until it was too late. Please tell me it’s ok!🤷🏻‍♀️🙏

      Elizabeth I’m so excited for you! You will love canning!! Most resources say for best quality use within a year. However, as long as your seal is intact it’s considered safe to eat but the quality may have changed. I keep my home canned goods for 3 years with no noticeable change in quality. 💕Carol

    I'm canning these right now :) I have a qurstion about water level. I lut 3 inches if water in my canner. By the time I put in the last pint jar, the water was over the jars. I dipped some out to bring it back to 3 inches. Is that right? Should it be 3 inches before the jars are added or 3 inches after. After I dipped it out, now Im worrying it will boil dry.

      It should be 3” BEFORE adding your jars. Fingers crossed it will be enough water 🤞🏻

    Ok so I filled my black beans to the inch headspace and filled with part cooking water part hot water, pressure canned. They looked normal when I got them out and this morning they look gelled or something, flipped upside down they don't move. Lol. Is that normal or should I have gave extra room for liquid? (I soaked them overnight before doing it too, went by my presto manual step by step) thanks 4 the video

      Cookie Alvarado hi! You’re fine. You didn’t do anything wrong. It happens with beans and some are starchier than others. The “gel” is just starch from the beans. If they absorb most of your liquid they may discolor on top but are still safe as long as your seal is in tact. I’ve started to add fewer beans and more liquid to try to avoid this problem. But the process you followed is correct. I hope that helps 😊

      Also be sure to bring them up to a boil with fresh water before canning. Drain this liquid then fill your jar and use fresh hot water to cover to the 1” headspace...

I was so worried and didn't know anyone in my family that has canned beans or who knew and I was like eeekk what if its not safe 🤞😭I'm happy they're useable. And I did rinse them before boiling (after soak) but I added some of the cooking water not thinking it would be starchy (thinking it'd add flavor lol). I wish I would've used just hot water and I will 4 sure use a little less beans next time. Lol. I saw all your canning videos and was like THIS LADY KNOWS WHAT SHE'S DOING....       I put up 24 pints of golden chicken broth today. If you've never had mushroom stems in your"veggie trash" you keep in the freezer for broth.... I HIGHLY recommend it. Great flavor!

    I’ve been watching a lot of videos about canning meats and beans because I’ve just started using a pressure canner. I’ve done pickles, jellies and jams for years and just haven’t moved to the pressure cooker. BUT, I’m excited about using it now that I’ve done a few batches (from your tutorials ☺️) and I’m doing these beans today. In my opinion, you have provided the best information and tutorials on pressure canning. Thank you for sharing your secrets for successful pressure canning!!

    I’m Cuban, and I pressure cook my black beans for about 5-12 minutes. I presoak for 24 hours. I add a bit of cilantro, onion, garlic, salt,after pressure cooking is complete .am I able to can this ? Cuban black beans 😋

    Carol! Thank you for this recipe! I made 4 pts of these, never did anything like them before, Canadian, eh, not big on beans but I’m trying! Am going to make the bean dip this week, (just 1 jar), and fresh guacamole & send half to my dil. I hope we love it, the 3rd bean recipe of yours I made in one day. Next, I want to try the Mexican pintos. Do you have any sources I can reference for using the beans in recipes? In my area of Canada, we just aren’t big bean eaters. Things change geographically! My mother’s mother came from Kentucky but the only thing I can see she carried on was pan gravy. That & mom could cook anything, fried chicken, stewed chicken & plump dumplings, chicken cacciatore, Chinese, but no beans😂😂. Thanks for your wonderful videos. Love your calm demeanour.

      Keepingourhome thank you for your kind words! 😊 And good for you for trying new things. I don’t really have one food reference for bean recipes. Pinterest is always a great resource or the All Recipes website. I’ll give you a few of my go to... the Cajun Red Beans are perfect for just heating and pouring over rice. That’s a traditional southern US dish. They would also be great in chili. These Chipotle Black Beans are a great starter for Black Bean Soup. Just add 1 qt of chicken stock and simmer a few minutes and you will have a delicious soup. The madness behind the Mexican pintos is to use them to make retried beans. Just drain most of the liquid, add 1 T of olive oil to a pan, add fresh chopped garlic, stir in your beans and mash with a potato masher, perfect retried beans 😊. A few pulses in your food processor with a jar of chili beans, then heat and you have instant and easy chili dog or burger sauce. Often for the baked beans I add sautéed smoked sausage or even ground beef and you have a full meal. Corn bread is great with any bean dish and traditional with beans in the states. Really the idea with beans is they are the perfect starter for any easy meal. Just add meat, stock or other veggies and you have a great meal. Be creative and add other ingredients to your liking. Honestly you can’t go wrong. They are so wonderful to have on your shelf especially for times like current circumstances bc they are inexpensive, filling, nutritious and a blank canvas to enjoy as is or with just about in other add in ingredient. Hope this is helpful. BTW, my husband is also from Kentucky and also loves all the things you described above 😂. Thanks for watching and supporting my channel 💕Carol

      Keepingourhome one more thing, beans are also great for cold salads. Drain the liquid, add chopped fresh veggies of any kind and a salad dressing, vinegar based or creamy, chill and you have a yummy salad! Also toss drained beans into a lettuce salad for extra protein 😍

    Hi Carol!! Love, love, love these!! I made these a week ago and they are the best beans I’ve ever eaten. I’ve been eating them a pint at a time with nothing but some cheese on top. Well......my supply has gone down so wanted to make Another batch. Well......there’s NO dried beans here at Walmart or Food Lion. I went to a different Walmart about 40 miles away and found only a bag of pintos and red kidney beans so I grabbed them. I’m trying to stay home because I’m 62 and have heart disease and don’t want to catch this virus. I will make yours with the beans I have for now.

      These were delicious. I did find a whole pepper to be a bit too hot. So this time I'll cut them and freeze the leftover peppers. When I open the jars of beans, if I want them hotter, I can add more pepper to them later. Actually, I plan to make more soon! Thanks for the great canning recipe.

    OMG, those sound delish!!! Living in AZ, we use chipotles A LOT. I created a way to save the extra peppers & adobo for freezing. I blend them with a tiny bit of water (they'll get too pasty, if not) and use an icecube tray to separate them into 1 pepper quantities & cover it with plastic wrap to freeze them for a day. I remove them from the mold & place them all in a freezer ziploc bag, with the date on it, and they are in perfect 1 pepper squares for my future recipes! Lately, I started using my Jell-o Nascar car molds (I have all boys, so... no Disney princess molds around here!) and they look so cute, sitting in a baggie, like little chocolate brown hot wheels cars!     I'm so excited to can these! Hubby will love these! And so will my brothers! One of my brother's smokes a lot of pork butts and for the last couple of years he's added these chipotles in adobo sauce!     First time viewer to your channel. Definitely subscribing! These are great! I have large quantities of dried beans and its hard to plan ahead and soak small amounts for different meals. This allowed me to make a canner full and start better utlizing my dry food stocks better. I noticed after canning, the jars had white residue that settled at the bottom. It looked odd but i deduced it was the internals of the black beans that settled after a few days. After making taco meat I emptied skillet, dumped the beans, removed chipotle and garlic then mashed beans into refried consistency. Best refried beans we have ever had. Thanks again for the recipe. Good job!

    Are there any certain brand of black beans that you use? I've noticed mine have split some when I canned them. I love your recipe though! Thanks for sharing.😊

    How do you stop the gas from beans? My husband just made a canning pot and another pot of baby lima beans soup and I tried the baking soda and some vinegar and still had so much gas. I think I would cut the pepper in half and put in an ice cube tray and freeze and then in a bag.
