There is definitely gluten in Italy, but like you said a lot of their food is "pure" in the sense it is grown without the use of pesticides and it is sold/consumed sooner rather than later. Meaning there is not a need to pump the food full of artificial preservatives. So in Italy it is easier for your body to process gluten and dairy because it is coming from a more natural source.

And its gratifying as hell to eat a pizza you make. And, fun event for the family. Everyone can make their own kind and have their own pizza. Doesn't sit as heavy. Simple. Cant recommend making Italian pizzas at home enough.

There is sugar in all American dough and also there is no GMO wheat in Italy. GMO foods have been banned by law there making the wheat different. So there is gluten but its not the same as in America.
