I have the same layout with the Atlas controller and selectors and I recently added DCC with a Digitrax Zepher. I didn’t need an additional DPDT switch. I run DC on Cab A and DCC on Cab B on the selectors. I keep both DC power packs on for switches, turntable, and lights like you mentioned.
It's good to see that the old Atlas selector switches still work with the DCC installation. There are a few good reasons to keep them. These reasons relate to a parked DCC locomotive. The first allows the locomotive to be shutoff to conserve power and reduce power draw on the system. The second reason prevents misdialing off the locomotive address (aka selecting the wrong locomotive). The third reason prevents locomotive creeping due to the throttle not being set to zero. Bonus reason: It allows shorts to be more easily found by shutting down track power to the blocks in order to isolate the problem.
I agree DCC-EX works beautifully on brass G scale track - a lot of brass in them! Great video - thanks for spreading the word about DCC-EX, I find it's incredible value for money.
I'm a big fan of things that are open source so this fits right in. Jimmy from DIY did a recent video on some updates that make it to where that you no longer need to cut those traces and you can get 5 amps of power.
Yes. I have the new EX-8874 motor shield developed by the DCC-EX team and it's amazing. Not only does it provide 5A power on two separate track outputs, you can also configure each output on the fly to DCC main, DCC prog or old-fashioned DC. Amazing if you have a mix of DC and DCC locos like me.

I like the sounds you get with DCC, but it can get old after a while. Many times I mute the sound.

Another good reason is so that you can kill the lights on parked passenger cars without having to install a decoder in every car.

I would add one more DC to DCC switch in for one of the turntable siding tracks and turn that into a programming track

The red unit is R4. This came from Obi Wan's fighter as seen at the beginning of Revenge of the Sith. Is that the fighter you were thinking about?
