Ohmic Heating Process: Components and their Functions

This video explains the major components of an ohmic heating process of foods and their functions. Main components of an ohmic heating process are: electrodes, electrode caps, ohmic heating tube or chamber, and power source. Electrodes are the most important components of an ohmic heating process. It explains five important aspects for electrodes: (i) electrode dissolution, (ii) electrode corrosion, (iii) gas liberation due to electrolysis of water, (iv) liberation of volatile components, and (v) electrode fouling.
