Glen, I love your ice cream recipes, but I'd love to see you experiment with sorbet, and even make cocktail versions too using real fruit purees etc! I've made a watermelon and gin sorbet which was delicious!

Not a cocktail, but a mulled wine style sorbet would be something.

Have you folks ever had stout ice cream? it's AMAZING. There's a brand of stout ice cream sold in NZ which may well be the greatest ice cream I've ever had. It's called Speight's and it's made - appropriately enough - by a long established NZ brewery.

You should make a pumpkin ice cream for a nice fall treat. I made a pumpkin Oreo ice cream and it was insanely delicious. Recipe below for anyone who wants it:
    1 cup of pumpkin purée
1 tsp of vanilla extract (I used 1/2 vanilla bean because I gotta use them up before they go bad)
    2 cups heavy cream
1/2 cup brown sugar (I used light brown, firmly packed)
    2 tablespoons of honey
    5 egg yolks
    1/2 teaspoon cinnamon
    1/2 teaspoon ginger
    1/4 teaspoon of salt
    Pinch of nutmeg
Make your custard with 1/4 of the brown sugar and all the honey, whisk together the egg yolks, spices, and rest of the sugar. Mix the pumpkin and the vanilla in another bowl unless you’re using vanilla bean. I threw the vanilla bean in with my cream and let it steep for like 15 mins then went on as usual. After your custard has cooled, whisk in the pumpkin and put it in the fridge. Then just get out your ice cream maker and churn it!
After it’s done churning, mix in 6-8 crushed Oreos.

Thanks for posting, this would work well as a Trou Normande, rather than the Calvados base. Just pour some extra booze of choice over and serve between courses as a digestive/palette cleanser for what went before and an aperatif for the next course.
    A must on Burns Night.

I tried a similar recipe using your custard/ice cream base alongside 3oz of Japanese whiskey and some vanilla. Turns out 3 oz of whiskey was a bit too much. Still liked the flavor profile but next time I'm definitely gonna lower it to 1.5-2 oz of whiskey.

  • @ZachsMind

My go to cocktail is vodka and cranberry with orange juice and a fresh lime wedge. I've read it's called a Madras but when I say "Madras" to bartenders they blink at me so then I have to say "I want a vodka with cranberry and orange juice." And then they go either "oh! a cosmopolitan with orange" or "you mean a screwdriver with cranberry." Usually we forget the lime. I don't do bars as much as I used to. Anyway. I think that might make a fun ice cream. Or maybe a sherbet? Can you do sherbet in that thing?
