What the lady said was true, I'd put down any fast food for tinumis. It's a dish I grew up eating and loving, as many would say, it's my comfort food. You have really nailed it with this series of 81 Provinces. This series has to be one of the best you have done and I have seen. Thanks so much. I lived in the Philippines in 1966-1967 in Cavite City. Love the people and the food.
We also have tinumis in our hometown in Norzagaray, Bulacan. In our version, we use the meat of the pig or carabao instead of the innards. We also use different souring agents mentioned here but most of the household use sampalok. And in our town, we add vegetables in our tinumis like sitaw, pechay tagalog, mustasa leaves, green papaya, or sayote. 😊

Sa amin dinuguan yan...tinumis pala sa iba yan...msarap yan niluluto yan ng tatay ko sa mga fiesta kasalan etc cook kse tatay ko lagi naiinvite sa handaan..masarap na pulutan at ulam dinuguan😍😍😍
In nueva ecija we cook this in 2 ways. Dried and Soupy. When prepared for a usual dinner or supper, we made this with lots of broth with tamarind leaves and we normally add mixture of minced pork belly, pork shoulders and some innards. When prepared for feast and gatherings, we prepare this by letting all the juices dried and let the meat rendered it's fat until the blood gets course and it gets fried with the oil. Also when we prepare lechon, pure offal will be used instead of meat.
My father is from Nueva Ecija and my Mother is from Pampanga and I grew up in Pampanga. I think in Pampanga has "Tidtad" looks desame as this dish but we put vinegar isntead of the sampaloc. Also, the dish when cooked in firewood taste alot better than dish cooked in stove.
I'm from Nueva Ecija and we don't use innards in our tinumis. We just use pigs blood and ground pork. And sampaloc leaves. Maybe this is the old school tinumis in NE, the one with the innards. I still prefer the ground pork tinumis haha.

This was my favorite growing up and it's my son's favorite now as well. I cook this for all my Filipino friends and I'm always surprised to hear that a lot of them never heard of this (unless they are from Nueva ecija ofc) it's hard to find the sampalok leaves here in TX, I sometimes have to ask my mom in CA to ship the canned ones for me but whenever I can cook it this way, it's always so worth the wait 😋
Hooomaaaygaaaad! I'm not from nueva ecija but my grandmother was born there and tinumis was the signature dish of our family.. its the one dish that's been passed down to different generations.. i love it!

Please get an editor of the translations from Tagalog to English. I just noticed that some of the translations used as subtitles are not really the exact translation. I am just worried that other people might mis understand Filipinos. For example, in your video, there’s the grandma who said that whenever she cooks Tunumis, their “neighbors would come and ask for some”. But the translation used in the video is that “they demand” for it. It has been translated differently and a somewhat negatively.

We called it Tinumis also in Bulacan and not dinuguan at we use either dahon ng murang sampalok or sampalok and not vinegar

Here in batangas tinumis is a dish of banana bell or puso ng saging.
