I like both themes. The original is more melancholic while the remake keeps some of the melancholy while adding some "epicness" to the fight. I agree with a commenter on Reddit who said that the original theme was for Maiden Astraea, while the remake theme was for Garl Vinland.
This boss fight just really makes you pause and question your motivation. As a character we consume souls for power to slay greater demons and to prevent becoming a mindless red phantom. Here is a fallen cleric and her guardian, offering souls to the old one in exchange for power to comfort others abandoned in a world ensnared by death. Ultimately, she doesn’t even raise a hand to you. There are no victors or champions in Boletaria. This song for me, just really captures the acceptance of what is, along with seeing hope which is forever just out of one’s reach.

After recently replaying the game several times once again, it was really great to see your comment here - since, out of all the boss fights - the Maiden Astraea fight is the one that REALLY sticks with me the most. Original theme: I really do love how the harp rhyme in the original sound creepy yet tragic at the same time. But I can't help but notice the rhythm itself isn't very long and when you do break it down it's always on repeat. But overall I still love it Remake: oh boy when I saw that new theme came out I saw MILLIONS of people hating the new theme of Maiden Astrea. Like I get it that there are certain stuff you don't like about the remake but good god calm down. But how's the new theme compare to the original? Honestly, I prefer this over the original. Why? Because it does such a good job of telling the tragedy of Garl Vinland and Maiden Astrea. Two people who came to the valley of defilement to help those that were cast away from both the kingdom and by the god she had faith in for so long only to see that how miserable and hopeless the valley is. So she decided to stay and help of those in the valley only to become a demon at the end of the day. To the slayer of Demon's, they don't see a person trying to help those in the valley. They only see another demon to be slain by their hand and Garl of Vinland is the only thing that stands in your way of getting her soul. And the new theme they added when we kill Garl, perfectly suits that Astrea lost everything. Her beloved bodyguard, her faith in God, so why bother putting up a fight?

People who complain about nostalgia are so dumb, music is one of the oldest forms of art meaning you can't just brute force it in remakes and you have to be really good in the field otherwise it usuallycomes across as underwhelming(also why it's nearly always downgraded in any remake) This bit of music is basically the reason Maiden Astrea hits so hard, it's the first proper "melancholic souls" moment and the music is HUGELY important alongside the voice work in getting that across No place for cellos and a choir, sooo bad
That could just be attributed to essentially telling the story of astraea and garl vinland from a different perspective. they're not evil, they're not violent. They want only to bring peace to the denizens of the valley. Nonetheless, they must be stopped, as their good intentions are being used by the old one to feed itself.
analysing both from a neutral point of view i will make it short: The original one: a loop of a very simple melody, probably accurate by the time the original game was made. most people that are attached to nostalgia will probably prefer this one. The remake: a much more elaborated and complex performance, proper for a next gen version and definitely a more fitting one (for this new version of the game) newcomers and most people in general (except the already mentioned classic fans) will prefer this one. although from my point of view there's no reason to get mad because of that. The ones that hate the remake so much can play the classic one, nobody forces them to buy the new version 🤷🏻♂️
The reason people hate the remake is because it'll probably be the version people play the most and it butchers the artistic vision of the original game. Not everything has to be some complex piece, the original is simple for a reason. You are meant to question whether or not you are truly just at this moment and the track is an appropriately sober piece. Saying "if you prefer this one its because of nostalgia" is a BS argument. The remake version, I agree is more fitting for the new version of the game but that is due to what I mentioned prior. The remake removed the original's dark, horror atmosphere in favor of an almost TLOR type vibe and it seems to be trying to be something like Dark Souls 3 when that isn't what Demon's Souls is. The remake track has an "epic" feel to it which almost entirely disregards the context of the scene. I will always love the Demon's Souls remake, it was my first Souls game and despite only four years passing I have grown nostalgic for it but I can acknowledge that in every artistic measure, the original is superior and it is my preferred way of playing the game now. The remake stands as a technical masterpiece, however it completely lost the soul of the original. Just because it's next gen doesn't mean they had to go "elaborate and complex" for the piece, they could've used their to resources instead preserve the feel of the original track while providing an upgrade. An example of an OST doing something like this is the FF7 remake or an even better example being the recent Silent Hill 2 remake.

the remake is alright but nothing compares to the first one. The first one gives me a feeling of hopelessness, sorrow and despair. It truly reflect the situation the maiden was in and while the player had to deal with with her bodyguard it is the maiden which we were targeting (therefore the Antagonist). The remake ost put to much emphasis on the battle between the player and vinland. In my opinion way too epic and (emotionally) uplifting and shift away the focus from the maiden.
While the Remake version surely sounds good, its just such a generic interpretation of the original. It really feels like this applies to the entire Remake. Looks and sounds great but lacks the uniqueness of the original that still sets it apart from every other game, even amongst FromSoft titles.
Bluepoint did such a god damn great job with the remake. After hundreds of hours in Elden Ring, seeing Demon's souls remake visuals is like a generation ahead. The lighting alone is soooooo much better than the garbage fromsoft uses.

That's such an unfair comparison lol, DeS is arguably the best looking game graphically and visually and it was able to achieve that only by using the new generation hardware to its full potential. Elden ring however was optimized for both new and old generations, and it still looks pretty damn good.

Yes, the remake is more orchestral and elaborate, but the original just packs more punch, feels more powerful. The remake is too soft with its notes.
