In this case you can't compare diamond vs graphite (pencil lead) with pasta vs noodle because the difference between the two group are not comparable. Both pasta and noodle dough are made very similarly with the difference being it's flour. Pasta flour are denser than noodle flour, it had more gluten which is why pasta and noodle look and taste very differently and why you don't want to add salt to pasta dough. However the chemistry of both are exactly the same, the salt is there to help the gluten bond which you don't need to add if the dough already had extra gluten... If you don't understand any of this, that's fine. It's not important. The important part is that the dough from both should be comparable, the result should be different but it should exhibit the same behaviour. My question to you is, how's your real life experience regarding the difference and not this weird 'diamond and pencil lead are different despite composed of the same atom' or 'the process are different'.
