North Indian snack
Here's a simple recipe for making Dahi Bada (Dahi Bhalla), a popular Indian snack made of lentil fritters soaked in yogurt and garnished with spices and chutneys.
*For the Badas (fritters):*
1 cup urad dal (split black gram)
1/4 cup moong dal (optional)
Salt to taste
1 tsp cumin seeds
half inch ginger
Oil for deep frying
Water for soaking
*For the yogurt mixture:*
2 cups yogurt
1/2 cup water
1 tsp sugar
Salt to taste
*For garnishing:*
Roasted cumin powder
Red chili powder
Chaat masala
Tamarind chutney
Green chutney
Fresh coriander leaves, chopped
Instructions:
1. *Soak the Lentils:*
Wash and soak urad dal (and moong dal, if using) in water for 4-5 hours or overnight.
2. *Prepare the Batter:*
Drain the soaked dal and grind it to a smooth batter, adding a little water if necessary. The batter should be thick.
Add salt, cumin seeds, and baking soda (if using) to the batter and mix well. Beat the batter for a few minutes to make it fluffy.
3. *Fry the Badas:*
Heat oil in a deep pan for frying.
Wet your hands, take small portions of the batter, and shape them into round balls or patties.
Gently drop them into the hot oil and fry until golden and crisp.
Once done, remove them from the oil and place them on paper towels to remove excess oil.
4. *Soak the Badas:*
Take a bowl of lukewarm water and soak the fried badas in it for 10-15 minutes.
Once they soften, gently squeeze out excess water and set them aside.
5. *Prepare the Yogurt Mixture:*
Whisk the yogurt with water, sugar, and salt until smooth.
6. *Assemble the Dahi Badas:*
Arrange the soaked badas in a serving dish.
Pour the whisked yogurt mixture over the badas, making sure they are well-covered.
Drizzle tamarind and green chutney over the yogurt.
Sprinkle roasted cumin powder, red chili powder, and chaat masala on top.
7. *Garnish and Serve:*
Garnish with fresh coriander leaves and pomegranate seeds (if using).
