Here in Delhi, almost all the South Indian Restaurants (except fine dining and state houses like Andhra bhawan etc) add lots of maida (refined flour) to look it thick ( and save cost on peanuts and daal). No taste in chutney.
It's definitely a malpractice, which isn't good in the long term.
Its not possible to add maida in an uncooked chutney that might be some other cheap dal used. The original chutney is always coconut based.
Most restaurants add maida into the medu vada and dosabatter.
Maida in chutney is sad at all level🥺

One of my favourite chutneys we make at home. We do add some fresh coconut too. It’s yummy with piping hot idlis with ghee and podi on the side. 😋😋😋😋😋

Yes correct, no need to add onions ,taste will differ a lot ,I too will prepare with roasted Chana dal or peanuts fresh coconut and fried green chillies, yummy taste,
Fresh coconut gets spoiled early so only hotels prefer dry coconut in chutney

I know this chutney typically served in andhara mess and hotels….and trust me this is not good at all. Andhara has some great recepies and this simply ruins it. The problem is mixing raw peanuts and roasted Chana together. Just simple roasted peanut with or without coconut tastes great !

@@Abc13223 don't imagine things on ur own...in hyd in most of the hotels they supply thicker chutney..no one is suffering with diarrhea.
The idli dosa places are not using washed and soak dals( chana, urad) or rice.
Instead they using powder.
Very unhealthy and can cause gut issues.

Hotel style is only tasty for tongue but even for tongue - stomach is v.bad. We at home use less chilli, & coconut too. Here this is commercial preparation, not healthy.
