A Frittata is just a Quiche without a Crust 🥚🧀

  • A fast, easy, hot breakfast - perfect on a cold morning (or if you need breakfast for a group on 45 minutes notice). You can easily modify the amount of eggs and other ingredients for whatever size and flavors you want (adjust the pan size accordingly).
    Ingredients for a basic cheese frittata - you can optionally add 1 cup of sauteed filling ingredients (meat/vegetables):
    10 large eggs
    1/4 cup (60ml) milk
    1/4 cup (60ml) cream/heavy cream
    1/2 tsp salt
    1/4 tsp black pepper (optional, to taste)
    1 cup (100g) shredded cheese of your choice
    1 Tbsp. cooking oil (I'd recommend a higher temp oil like avocado here)
    Directions:
    Preheat oven to 375F (190C). Whisk together eggs, milk, cream, salt, and pepper. Add 3/4 of the cheese. Heat a 10 inch cast iron pan over medium heat, heat the oil, then add the egg mixture. Cook for 5 minutes without stirring until the eggs start setting around the edge. Sprinkle the remaining cheese on top. Transfer to the oven and bake for 20-25 minutes or until the frittata is puffy and the center is just set/no longer jiggly. Let cool for 10 minutes before slicing or removing from skillet.
