I use a arkansas 12 inch hard for 90% of sharpening till it'll cut arm hair easily and then a 10 inch translucent arkansas to finish off. Bit expensive but will last a lifetime and is very therapeutic to use
at what angle do you sharpen the knife? I understand that you do not measure it since its by hand - but I was curious to what angle you have found works best with victorinox knives? Since that particular steel and grind is quite popular where Im from.

Christian Andersen 7-8 degrees per side which is low, 22 inclusive works just fine

I hear that steel is very near to CROMOVA 18 used in Global knifes. Anyone own both and find them the same
