So for example Cogger would play DK Wario and K.Rool (Little Z's best characters), and Peter would play Lucina Ness and Game and Watch (Poppt's best characters), etc. That way we can see who's actually good at the game and who's just carried by their mains

Simple video idea: Doubles with a twist... and the twist is that the switch's scale of grey filter is on + team attack so you won't know who your teammate is (you can activate the color filter in the switch's settings). Sounds like a fun thing to try

Video idea: Do a tournament with 2 playing and 2 people on commentary. Each person on commentary is assigned to one player. The commentators will choose their best characters for the players to play. the commentators must coach the person that they were assigned to mid match or before match.
It's downright comedic to see people who you know have been playing Ultimate for years look like they just got the game when playing their worst characters.
Next tournament: one stock, 5v5 squad strike. Gets fun because of the strategy involved in both picking your team and your lineup. Might get a little long, but you could always turn it into a two part or just make a test video.
Imagine a 'tournament' where they can pick the characters but you and your opponent swap whose character is their's every match. E.g. if LittleZ chose Wario and Poppt1 chose Lucina and they were going to vs LittleZ would then own the Lucina and vice versa.
A tournament where you play as the characters you find most nostalgic. I think it would be fun to hear what stories from your past you have about them.
