Micah, I buy bellies from the local butcher shop to make my own bacon. What I’ve found that works well is that after you wash off your initial cure, pat it dry and reapply your pepper and Campdog before smoking. Use a corse ground black pepper. I like to season mine with thyme, garlic, onion powder and black pepper.
And they say don’t use black pepper on smoking meat proved them wrong love them flavor with CampDog and black pepper great job . Yes I need to get one of them knives

We call that peppercorn bacon in these parts and you can really taste the pepper and the spices. Brother Barry Rankin’s suggestion of reapplying the pepper and spice would definitely take your steakhouse bacon to that next level you are trying to achieve.👍🏽
Wright's bacon uses cracked black pepper, not finely ground black pepper.(or use both) So next time use cracked black pepper and maybe pound it in the raw bacon with a meat mallet or something similar.and those knives are definitely good knives and well worth the money.looking forward to more of your experiments this winter ..

The weather has changed so much since the ole timers it’s almost impossible to hang meat in the smokehouse all winter long anymore. This bacon recipe looks great!!!

McGie the bacon looks more like streak of lean, there's hardly any meat in the slices. I've switched to Canadian bacon to get more lean 🥓 meat. Good video though 🖐️later

I was asked didn't it make me sad and guilty knowing a hog was killed so I could have pork chops and bacon. I laughed until I was almost blue in the face. Sure! I felt bad same as when I stepped on a roach on the concrete floor of my garage.
Mix equal part of your salt and brown sugar and cure for atleast 5 days....wash off like normal....before hanging in smokehouse....then you coat 1 side with nice layer of coarse grind black pepper.....i believe this will yeild the result you desire my brother

Salt and Sugar Cure as usual. Rinse. Then Seasonings before hanging to smoke in the Smokehouse. Similar process as to Barbecuing a Brisket.
