I don't want to sound Judgy....but if there was going to be water in it anyways why not use the water from the soaking? the starch would help thicken up the sauce

Selena Moreno the water is for preventing the veggies from oxidation...also soaking removes or lessens any bitterness the Brinjal might have...so no point in addition that water
