  • Brown Butter Chocolate Chip Cookies
    220g Butter (+extra)
    150g Brown Sugar
    100g White Sugar
    1 large eggs + 1 Yolk
    2 tsp Vanilla
    230g Flour
    1 tbsp Corn Flour
    ½ tsp Salt
    ¾ tsp Bicarbonate Soda
    ¼ tsp Baking Powder
    100g Semi Sweet Choc Chips
    100g Milk Chocolate, roughly chopped
    100g Dark Chocolate, roughly chopped
    1. Heat Butter on a medium heat, stirring occasionally, until it starts to get a deep golden colour
    2. Measure the brown butter to ensure you have 1 cup, add a knob of butter and stir to bring it up to a cup
    3. Set aside to chill for at least 30 mins
    4. Beat together chilled brown butter, Brown & White Sugar & Vanilla
    5. Add the egg little by little until the sugar has dissolved and the mixture is pale & creamy
    6. Sift together the flour, corn flour, Baking Powder, Bicarbonate Soda and salt
    7. Mix in the dry ingredients to your wet ingredients, making sure not to over mix
    8. Add the chocolate chips and stir until evenly distributed
    9. Scoop out the cookie dough into a lined tray and chill for at least 3 hours, or overnight
    10. Preheat the oven to 180 C
    11. Lay out the cookie dough balls on a lined or greased baking sheet with a gap in between them
    12. Bake at 180C for 12-14 mins or until the edges are slightly golden but the middle is still gooey
    13. Take it out of the oven and let it sit for about 10 mins until its set and firms up
