I'm 1.93 m tall (6'3") with a femur length that's 32% of my body height. I find it freaking hard not to have a slight butt wink when going below parallel during back squat, even when wearing weightlifting shoes. I'm not sure if it's due to a hip flexibility issue or my long femurs. I can't use a wide stance due to my hip anatomy but I noticed that turning the toes out more (about 45°) reduces my butt wink. My primal squat is super deep, I can almost touch the ground with my butt. Seeing these athletes having a perfectly straight back throughout the motion is kind of frustrating though. Can't really figure out what's the trick.
It's a combination of ankle and hip mobility, the proper stance, and good control of your trunk. You also have to remember that based on anatomy, not just mobility, your true bottom position with proper posture may not be that deep. So for example, you can see in this video, the tallest girl in there who has really long legs also can sit rock bottom perfectly, but one of the other ones is not terribly far below parallel, but that is her full proper depth. So my point is that continue trying to get as deep as you are capable of, but understand that what you are capable of might not be a true ass to ankles position.
