Could always swap ‘em at the markets if can’t catch them often. I often get snap-frozen green bug meat when in a pinch but it’s surprisingly good these days. Cheers
These are Scyllarides squammosus Blunt slipper lobster mate little diferent to the bugs that live in the sand/mud these guys like to live on the rocks. Similar family tho. Could definitely substitute the meat out though
Amazing video as always! What about steaming the tail whole and using super sharp knife to separate it into chunks and then reconstructing that on top of custard? You'll have presentation + ease of eating. It'd probably be hard to plate but just thinking out loud.

Slippers arent sold much because they arent often caught in traps.
Interesting, I wonder why they dont like the traps where as easterns seem pretty happy to climb in
