Food can be and should be prepared in a variety of ways as to establish a large repertoire of flavors and textures to satisfy the subjective humann palette and the individual flairs each unique person can grow accustomed to enjoying. In this case, it's just a fact a large % of people consider fries with things like cheese melted on top of them as more flavorful as a lot of people love melted cheese on crisp oily potato based foods and the like. As for being soggy though, that sounds a bit like a skill issue now doesn't it? But, sure maybe some like it that way, but you can prepare them to be eaten quickly as to greatly retain the crisp or even double fry the fries to have resistance to give them more time to be eaten if you're in less of a hurry. I personally love fries to be covered in all sorts of things, but sure, cheese and perhaps chilli are some of the usual suspects. I would look into learning about cooking techniques or trying out different restaurants to have some cheese fries or the like that retain more of their crisp since you do have a particular affinity for it. There is a reason though why so many will gravitate to melted cheese on fries when going for indulgence.

The times I’ve gotten them it was way undercooked and had gotten soggy from steaming up in the bag during my two block walk home with it. Wasn’t that great tbh especially when I can get more fries for $3 at any of the small burger/hot dog shops.
