Ultra simplified: More your DB to the next version first, then test that it runs with the old version UI... ideally you'd want to mimic the system being used in prod, or maybe a fraction of the volume and users. Then you point the deployment to the new UI (he uses a DNS, in my case it's my config file that points to the new app server), verify that no records were lost or compromised, action flows/workflows that started with the old UI can be completed with the new UI; functionality still works, etc, etc
