Buy a digital meat thermometer for $25 and cook to 160+ and you won't have any problems. USDA guidelines for PORK says to cook to 145 these days as trichinosis is no longer a problem in domestic pigs. I have been cooking my pork loin to 145+ which is medium, which is slight pinkish for years with no problems, same for leg of lamb and rack. Cook bear like you cook chicken and turkey, 160+ and well done and you won't have any problems.
Hope you guys get a Bear soon, your the only channel I've seen process all the meat. Plus give recipes and show the process of how to use the whole animal. God speed brother!! Hope you get your bear!🤜🤛💪💪🇺🇸🇺🇸
The rationale behind why freezing is not recommended is that there has been some evidence from marine mammals in the arctic with specific strains of trichinella to survive freezing temps
my dad got trichinosis from eating an undercooked chunk of bear sausage (while in the process of making the sausage). The meat had been previously frozen for months. Cysts of parasites are much more resilient than the adult parasites. Those suckers got into his muscles and it was very painful before it was all over. The cysts will remain inside of him and if somthing decides to eat him, they will get it also. fun fact lol
I think maybe if you got the freezing temps down to -60 Fahrenheit that might do the trick. But who has a freezer that can go that low just to take a gamble in the end right?
Awesome advice here, and I learned something new! Not being a bear hunter (haven't tried my hand yet) I had no Idea they carried Trich like hogs, now I do and will make sure to cook the hell out of the meat if and when I start bears.
165 is what the government says, but it's much more complicated than that. If you're doing sous vide you can even bring it down to 145 or lower and still be good because it's all about the length of time it's at a temperature. You can cook even chicken to 136 if you do it sous vide for a couple hours, but the government won't tell you that for liability reasons.
It comes down to what the bear has been eating prior to being hunted. A bear; be it Black, Brown, Grizzly etc, that has been eating a lot of fish and carrion is gonna taste awful. One that been eating more plant matter especially berries will taste better
I know bears eat even nastier stuff than coyotes. I have heard of bears eating dirty diapers out of garbage cans. Wouldn't that make them taste bad, or would it?
I'm awful late, chances are you already know it by now. But still No. It's not like salmonella. Trichinosis is a species of ringworm that burrows in the muscles of it's host and causes a fucking ton of symptoms and ailments.
They aren't worms at that stage. They are cysts in a host. You eat the meat the cysts hatch in the stomach acids and become worms. The worms travel throughout the body and become cysts in the hosts muscles. Then repeat......

Tom Something fierce😂
Yeh but from a different bear that he didn't cook nearly enough.
Dude ate it raw pretty much lmao what do you expect
How did he end up getting it?
@@christopherram8948 eating undercooked bear
I just harvested a boone & crockett 21 1/8 black bear in Northeast WA
Love your show Steve I have learned so much from watching you over the years
In Part 3 of our conversation series with Michael Ruhlman, Steve explains how to properly cook bear meat to avoid trichinosis. Check it out:
oops!
Rinella has said the word trichinosis more than any other word hes ever said lol
The bears continue to elude me.
Oh fuck you did eat a fox XD fuck didn’t you say it tasted like wet dog?
Oh lord.... you’re a savage

Who the hell wants rare bear meat anyway?

Freeze at 5° for a few weeks or heat above 137° and your good. Do both.
In this episode steve explains why freezing doesn't work with bear.
I’d love to be at a party with a drunk Steve rinella eating bear that’s my scene bro
Check out his other video where he gets trichinosis and gives it to a bunch of his buddies...
Plenty of wild game parties serve bear
When it comes to bear meat, rare or medium isn’t an option-it’s gotta be well done, unless you’re keen on inviting trichinosis to dinner!
This is good to know. And knowing is half the battle!

always cook well done !
Well.... This is good information for a guy about to leave on a black bear hunt next week.
+Kirito It was a great hunt. I did get a small bear, but being my first he is a real trophy. Was very delicious too.
@@johnathankarch4484 congrats man
150 isn't enough heat.
165 is minimum cooking temperature for black bear to kill trichonosis for black bear squirrel and pork meat
Believe it dies at 137° but I go to 160.

If I eat bear I'd want it burnt like bacon
Hi there I'm just puzzled than no one seems to eat brown bear only black bear we don't eat any bear here in the UK but I would love to try it
Correct way of wording it would be-
''People eat bear.''
A few kinds of bear, but Black bears are just more prevalent.
Brown bear consume way more meat, a lot of it being carrion than black bears. In coastal areas they'll also eat tons of dead fish.
No you wouldn't. It's complete shite. And you're likely to become violently ill
It comes down to what the bear has been eating prior to being hunted. A bear; be it Black, Brown, Grizzly etc, that has been eating a lot of fish and carrion is gonna taste awful. One that been eating more plant matter especially berries will taste better
I don't know why but the way he say "fat" is awesome.
160 degrees Fahrenheit?
Poor steve got trich
Helen Cho!!!!!!! Hi
Is it true that the meat will be safe if you freeze it before cooking?
No that is a myth parasites can survive when frozen it doesn't apply to bear meat.
Im far more concerned about fish than bears. 76% of pacific salmon have codworms
I know bears eat even nastier stuff than coyotes. I have heard of bears eating dirty diapers out of garbage cans. Wouldn't that make them taste bad, or would it?
Suggie Thames 100% accurate every time someone shits at elk camp it’s gone the next morning and surrounded by bear tracks, nasty nasty creatures lol
Bears will eat anything, pigs will eat anything, goats will eat anything, chicken will eat anything even their own crap.
Buttropes.
It amazes me that someone can shoot a bear and eat it, and not know about trichinosis.
is this the same as salmonella?
I'm awful late, chances are you already know it by now. But still
No. It's not like salmonella.
Trichinosis is a species of ringworm that burrows in the muscles of it's host and causes a fucking ton of symptoms and ailments.
No no it's way worse man.
Psychos
Christ. How about you don't eat the fucking bear meat.
But your still eating the worms right
They aren't worms at that stage. They are cysts in a host. You eat the meat the cysts hatch in the stomach acids and become worms. The worms travel throughout the body and become cysts in the hosts muscles. Then repeat......
How does the stomach acid not destroy it.
