While this was absolutely hilarious, this segment would need a lot of work if it were to return. You have to keep the contestants from buzzing in until the question is finished. And you have to do a Final Jeopardy round, where everyone places a bet with their winnings, which can go up to max, and then you have some amount of time to draw out the pressure! It's so much fun! You lose a lot of the charm of the original game when you simply move from one thing to the next, the way it was done here. Also, fitting in daily doubles wouldn't hurt. Gotta mix things up! If you don't do it that way, come up with your own types of mini-categories that make things interesting. Still, these topics were quite interesting and enjoyable! A good start overall.
My family and I play Jeopardy with boards that I make up. I would love to see the underdogs do more of this. I could send the PowerPoint template if you want it.

They could make a tournament out of the minigames just like they did in that sword fighting game (I forgor the name) from Wii Sports Resort.

I think just a Mario Jeopardy would be good. Each of the Underdogs seem to have a relatively equal knowledge when it comes to Mario.
