Another thing that MR sells is a bulkhead pin connector. Since you’re doing your own wiring you can wire all the cars the same and just disconnect the harness from the bulkhead connector when you want to remove the engine or trans harness.

That car is on fire on small tires!!! Whatever you do I'll be watching but please consider doing some more grudge races. Grudge racing is what got me into drag racing many years ago.
