I like to add 2-3 large chunks under the carcoal in the beginning of the cook. If you want it even smokier, you can add some smaller chunks into the ash box throughout the cook.
An also idea is smoked Corned Beef Brisket. I do those often, they are cheap near ST. Patrick's day and I buy a few flats. I rinse them several times then dry and place in fridge overnight. Sometimes I make a pastrami rub (with out salt) and coat the night before and smoke like a Brisket. Best pastrami hands down is homemade
