They didn't take Pod Racing as far as they could. Considering Harry Potter was able to make an entire genre out of Quidditch, we could have got so much more with it.

It's called over kill in my view. There was a time Star Wars was a treat because it was carefully thought out and filmed. Since Disney took over they just want to see how much money they can squeeze out of the Star Wars franchise. They have water down Star Wars and rush the film, resulting in weak storylines and unrelatable or poor main character choices.
Animated TV shows are cheaper and therefore allow for more risk-taking and creativity. Disney spend millions of dollars on their live action shows so they never want to risk making anything that won’t appeal to the most generic Star Wars fan.

Yes. there's this weird urge to see these characters in live action, that it's a step up, but I like the animation better even for the movies.
Almost everything can be pottentially better when animated when your doing anything that is super realistic.
