A good rule of thumb for proportions is 1-1-1 to start any gravy or sauce. 1 tablespoon fat, 1 tablespoon starch, 1 cup liquid. You can use more starch for thicker, or add more liquid to thin it.
So you know. I am a Pole and we use milk to tenderIze a pork dish we call "Kotlet Schabowy". The milk is typically discarded, but I felt this was such a waste. Thank you for this video. I now serve it as the gravy!
Very good video. I'm cooking biscuits and gravy in the morning and I've never made the gravy. I have been scanning videos for examples and yours is more like the gravy I've seen made in the past. Thanks for sharing your knowledge!
Well for the best brown your flour to a peanut butter color before adding the milk. And never add water butter or margarine. Use bacon grease if you need more oil.
My mother made this years ago in ne. Pa. She had her great grama's recipe, she let it get get alittle darker, we called it burnt gravy and it was great , not everything is southern, music or food.
Ive always used evaporated milk and water, you can let the evaporated milk brown up a bit then add the same amount of water. It also adds a whole lot of flavor into the gravy. One of my grandmas made hers like you do though. We would call it brown and white gravy.
Hi Keri, thanks for sharing your recipe. I made some milk gravy just because I didn't want to waste pan bits and pieces after frying a pork chop and stored it. What are ways I can use the milk gravy, which is now kind of a paste? May I freeze it? It has good flavor!
Good question! You should be able to warm it up in a pan by adding more milk (and more salt and pepper, to taste, since the milk might dilute the flavor a little) and whisking it in until the gravy is hot and the texture you want.
You may be able to freeze it but I never have so I can't speak to how well that would work; however, I think the milk will crystallize so I don't think i would freeze it.
If u want your gravy more brown do u just add more bacon grease ? I am from eastern ky we like our gravy brown for our biscuits ! But your gravy looks good !! Don't get me wrong ! I'd scarf it up !
Oh my gosh I have no idea why I didn't see that someone had commented til 2 months later. lol I'm sorry. Umm that amount I made there would probably cover about 6-8 biscuits depending on size and depending on how much gravy you like (whether you wanna really sop up the gravy with the biscuits or just have a taste). :)
Oh and you can or you can use different meats like sausage that have more seasonings to them. If I'm making a brown gravy I tend to use the drippings from frying chicken and get all the nice little bits of fried chicken crust in there. Of course you can also add broth instead of milk (or a combination of the two) if you want a brown gravy (at Thanksgiving time I make the gravy with butter instead of bacon fat, use the same ratio of flour as for the milk gravy above, and I use turkey drippings instead of milk).
Yes thank you for your comment. It should be browner before adding the milk. The gravy will have a richer flavor. If you want diner gravy go out to eat and keep your dishes clean. But if you want true southern sausage and gravy brown the flour. Am I wright
Jocelyn G That's so nice of you to say, thank you! I've heard that before and I've always laughed it off because to me my voice is so annoying. Haha Actually, you've inspired me with your suggestion. Any suggestions for what kind of videos to make? I dont know much about ASMR to be honest. Maybe I'll make a channel and give it a try!
You can do ASMR videos cooking, eating like mukbang, whispering, tapping on items, shaking and sprayed water bottles, brushing hair, doing a salon, doctor, dentist role play. The list can go on.
Cooking the flour a little first will toast the flour a little and give the gravy a richer flavor (the more you toast the flour, the darker it gets and the more flavor). Adding flour to milk will thicken it too but it won't have the same flavor. I hope that helps!
Your voice is very tender and timid.❤ And although, very sweet, not very helpful on TH-cam. Sorry, I can barely hear or understand you. No Offence darling, but please talk a bit louder. 😉 Thanks for trying to help though. edit: ps. Your printed recipe info is *more helpful* than any other's that I've found on TH-cam, tho... That is, for those of us that aren't wanting meat in our gravy. So, kudos to you. 💖And many thanks.
Yes sir! I hope to post future recipe videos and I plan to work on making them better quality (this was a spur-of-the-moment thing with my phone camera) and I will take your advice. Thanks!

Thanks for this! My mom taught me when I was a kid, but I needed a little refresher. This was perfect.
Thank you, i'm happy if i can help!
I can listen to this woman talk all night!!! Very soothing. And Thank you for the Recipe!

I can't wait to make this! Thank you so very much for your time.
My mother made this years ago in ne. Pa. She had her great grama's recipe, she let it get get alittle darker, we called it burnt gravy and it was great , not everything is southern, music or food.
Yeah, we called it brown gravy. My grandma would use condensed milk and let it brown a bit then add in the water.
The whisk on the pan is like an arpeggio across a harp.

Evaporated canned milk not condensed. (Condensed is very thick and sweet usually used in desserts/fudge etc
@@lizettahamann sorry, I always get the two confused when writing lol.
@@donniev8181 I know I always have to think about myself! Definitely a better taste with the canned milk
Great video! I'm going to try this way
Brown the flour to a peanut butter color and your gravy will be even better.
Such a sweet voice that I had to watch the video a couple of times because I kept losing my concentration.😌😌
Gr8 job!!! Love country gravy!!!
Thank you!! 😊
I just made the recipe and I love it
I'm so happy to hear that, yay!
OMG, a wire whisk in that nonstick iron skillet, just.....damn.
Thank you for keeping it simple i been looking on youtube how to make this stuff finally someone with brains can show me how to dont this thanks again
Use a wooden spoon to save the noise AND your pan
That’s an iron skillet. The whisk won’t hurt it.
Lindavid I was just going to say that.

@@KeriInOkinawa thanks for your response. Other than gravy, can it be used in other recipes?
@@veevee111 You should be able to incorporate it into a casserole in place of a cream of _______ soup! You might need to thin it out a tiny bit first.
@@KeriInOkinawa thank you for the tip! I dislike those goopy cans of creamed soups. Yay!

Also how many biscuits would that gravy cover u think
IronForce1TV oh man I don't know how I only saw your comment a whole year later (so sorry) but this should cover 8-10 biscuits depending on size.
No you don't have to use bacon or sausae.. regular lard is fine look at Paula dean milk gravey .
Don't watch her son making it he doesn't have a clue how to cook this. I just watched him.
Good recipe I could not hear a word you said though
You were too busy watching the gravy
What is the difference between white sauce and this gravy
They're very similar except this uses meat drippings and a white sauce typically uses butter as the fat (in my experience... i'm no expert).
white sauce is butter flour and milk that's what I make for Mac and cheese gravy is pan drippings flour and broth
You should try and make asmr videos. Your voice is so soothing.

Jocelyn G Ohh I see, thanks so much for the inspiration!
Does every one need a metal whisk today.
Ylwhy dont you cook milk first them dissolve flour in it? Is there a reason?
Cooking the flour a little first will toast the flour a little and give the gravy a richer flavor (the more you toast the flour, the darker it gets and the more flavor). Adding flour to milk will thicken it too but it won't have the same flavor. I hope that helps!
Hard to hear over the stirring
Omg... the second The Whisk touched that pan I had to click off. Ahhhhhhh so loud

Are you in hiding?
Yes shhh don't tell anyone I'm making cooking videos or the smell of southern milk gravy in Japan will surely alert them to my location. :D
Fawwkkk my earssss
Might be a good video if you talked loud enough to understand you
Please PLEASE put subtitles on your videos, your voice is so quiet.
Thank you for the comment. This is valuable feedback and I'll definitely try to figure out how to do that.
oh my !! please use something else to stir !!!!! maybe a wooden spoon. lol i stopped the video because of the noise
Retta Kaye 😂😂😂😂😂😂😂
Wimp
Under Ground sounds like you got deeper problems than that.
i stopped watching when i seen the metal wisk.
