Smoked BBQ Chicken Thighs on the Weber Kettle Grill with the Slow N Sear | Barlow BBQ

  • Today we show you how to make delicious smoked bbq chicken thighs on the Weber Kettle Grill with the Slow N Sear using the reverse sear method. We rub the chicken with our homemade coffee chili rub, and then top them off with a tangy, sweet, and spicy bbq sauce. Full recipe is below!

    Earl's Chipotle Powder

    COFFEE CHILI RUB
    3 tbsp chili powder
    1 tbsp crushed red pepper
    1 tbsp hot paprika
    2 tbsp Montreal steak seasoning
    4 tbsp turbinado sugar
    1 tbsp coffee grounds
    1 tbsp chipotle powder
    Combine all ingredients. Oil chicken and coat heavily with rub.
    BARLOW CHICKEN BBQ SAUCE
    1/2 cup ketchup
    1/2 cup banana sauce
    1/4 cup sugar
    2 tbsp molasses
    1 tbsp brewed coffee
    1 tbsp soy
    1 tbsp chili powder
    1 tbsp apple cider vinegar
    2 tsp whole grain mustard
    2 tsp ghost pepper hot sauce
    Combine ingredients and whisk.
    SMOKED BBQ CHICKEN
    4-6 lbs whole chicken thighs (skin on, bone in)
    Coffee Chili Rub
    Barlow Chicken BBQ Sauce
    Rinse chicken and remove skin. Brush thighs with oil and heavily coat with the Coffee Chili Rub. Let sit in fridge until time to cook.
    Set up your grill for indirect cooking. Light a charcoal chimney full of charcoal and once lit, add to one side of the grill (or to the Slow N Sear if you have one). Cover and let grill come up to temp, approx 350-400 degrees.
    Once grill is up to temp, add chicken to side opposite of the charcoal. Cover and let cook until internal temp of chicken reaches 165-170 degrees. Sear chicken over direct heat and flip every minute or so, adding sauce as they cook. Remove once internal temp of the thighs reaches 185 degrees.

    Another good looking cook. Skinless chicken thighs making the rub be the skin, awesome. That must have been a good bark on the chicken. The onions looked great also, they are an underrated treat from the grill. For some reason my Spice Pantry clean out does not look like that. 🙂 I think Taco was taking a Q from Toby In Florence and making himself known so he did not get left out of the tasting.       Happy weekend to you, Jay! Hope you are enjoying it! Taco has been out at the grill with us since day 1 many years ago in Arizona when I began to get into backyard bbq. He knows what's up, and 9 times out of 10 he's still always out there by the grill if he's outside. And he always gets a taste, I know he enjoys it as much as we do lol!
      To be honest, we loved the onions just as much as the chicken, they went so well together and the texture and flavor were perfect. Cooking the chicken for this video was about the third time we had made that in the last couple months, the recipe is that good! Glad you enjoyed, and it's always so nice having you come by.     I want to try this man, dont have much experience grilling and when I do I burn the crap out of everything... Just recently learned that I need to get a chimney starter instead of soaking the coals in lighter fluid

    That montreal steak seasoning is my goto! Never thout about taking the skin off of the chicken but I like the crispiness of the skin coming off the grill though. I bet the flavors were awesome sweet and spicy.

      Yeah, I cook it with the skin on but I do not sear it. I think searing it makes sense because the skin is off. I imagine it adds the texture that is missing from the skin. I will eat it either way though! 🤣🤣🤣

    Question. Why the low and sear as opposed to the charcoal basket on each side? I just did thighs with baskets and they came out great and gives me a little more space compared to just using one side. Is the low and sear really with the extra $130 plus dollars?

      Katz Steel that is a great question - and one that is quite contentious as well!
      For many years I made great bbq using the Weber charcoal baskets. I think they’re great. For me, the Slow n Sear is a giant charcoal basket. I love it, but I don’t think there is any inherent “magic” with the Slow n Sear. Knowing how to run your pit trumps any tools that you may use. The benefits of the SnS in my experience has been the larger volume of charcoal that I can use at a time (less filling and fidgeting), which helps to keep the cook going. Also, the SnS is a great tool to use when searing.
      Do you NEED a SnS to make great bbq? No - your charcoal baskets will do just fine. But is it worth considering a SNS? Certainly! It just makes things a little easier to manage and control, plus it offers the versatility of searing as well as smoking. I can also attest that the company is legit, I’ve met the owner, David Parrish and he’s a great guy. So add that value when considering a SNS. But only you can make that decision for yourself.

      Katz Steel yep it’s really all about having options. I’m glad my reply was helpful for ya, although I honestly don’t have a “side” when it comes to the SNS debate. It’s bbq - do what you want lol! I’m not much of a gadget guy so I like to keep things simple. Like you said, it’s nice to have some options, and the SNS is a solid one IMO.

So my wife Martha is our recipe guru, I don’t know quite how she does it, but let’s just say she’s got a knack! 😉 Typically when were working on a sauce recipe we’ll have an idea then just start experimenting to see what works. Some sauces come easier than others, you just have to start messing around.

      Larry MF Johnson I would rate the sauce around a 6 or 7, but heat can be tricky to rate because it’s so subjective. I’m pretty well acclimated to heat, so a 6 for me might be a 10 for someone else! I’d recommend checking out Earls Ghost - theirs sauces definitely have heat, but they have great flavor.       If you are afraid go for the Chipotle ( they have sauce and powder) it’s hot but not face burn hot.

      Larry MF Johnson if you like heat, this combo is great. Those sauces are so tasty and pack a good heat, but not so much you can’t enjoy the burn.

      itsfordoc1 well it’s tricky for me to rate how hot it was because I’m pretty well acclimated to spicy food. For me, heat level was about a 4 or 5 out of 10. Flavor was awesome though!!

      Tango Joe yessir these are so good! I was actually kinda turned off to bbq chicken for awhile until we decided to revive this recipe. Chicken thighs are the way to go - I can’t get enough now lol! Appreciate you coming by and glad you enjoyed it! ✌️✌️
