But what I want to know is how to make the pancit sauce...not use Mama Sita's? I can get Mama Sita's because we have a great Asian Foods market but.....I would like to be able to make it myself from scratch.

season your broth with salt , patis, toyo and black pepper (amount that suits your taste) before adding noodles , and thats it, explore and enjoy
