My Grandson is a chef at The Freighthouse restaurant in Paducah KY. They get these locally. They call them silverfish which is more pleasing to the Instead of saying flying carp.. He said they have a very good taste. And quite popular on the menu
I wonder why pet food companies haven't jumped on these carp. People don't want to eat them, so feed them to pets. Dirty cheap, absurd quantities, positive environmental impact. Seems like a winning solution to me.
