The LEGENDARY Canadian Nanaimo Bar, Eh?!

Bottom Layer
1/2 cup unsalted butter (European style cultured) (125 ml)
1/4 cup sugar (50 ml)
5 tbsp. cocoa (75 ml)
1 egg beaten
1 3/4 cups graham wafer crumbs (425 ml)
1/2 cup finely chopped almonds (125 ml)
1 cup coconut (250 ml)
Melt first 3 ingredients in top of double boiler. Add egg and stir to cook and thicken. Remove from heat. Stir in crumbs, coconut and nuts. Press firmly into an ungreased 8" x 8" pan.
Second Layer
1/2 cup unsalted butter (125 ml)
2 Tbsp. and 2 Tsp. cream (40 ml)
2 Tbsp. vanilla custard powder (30 ml)
2 cups icing sugar (500 ml)
Cream butter, cream, custard powder, and icing sugar together well. Beat until light. Spread over bottom layer.
Third Layer
4 squares semi-sweet chocolate (4 oz)
2 Tbsp. unsalted butter (30 ml)
Melt chocolate and butter over low heat. Cool. Once cool, but still liquid, pour over second layer and chill in refrigerator.

Over sixty years ago, my mum picked up the recipe card (from a glued pad in front of the baking chocolate) at Dominion’s (who remembers Dominion’s). That was the first time I tasted this Canadian classic. Happy Canada day 🇨🇦 Jamie. Loved the loon call at the end.

This bar reminds me of a cake here in Germany. Donauwelle. The chocolate and the pudding are the same, but it has a mix of vanilla and chocolate cake on the bottom. And between the pudding and the cake are cherries.

donauwelle is more fluffy. Nanaimo is more similiar to almondy cake. Basically a dense bar of nuts and chocolat that has just that small ammount of other stuff to make it a cake instead of a bar of chocolate
The yellow layer of a Nanaimo Bar is basically a vanilla American buttercream frosting with Bird's Custard powder in it.
My mom was from Canada. I use the City of Nanaimo’s recipe with a couple changes, walnuts instead of almonds, salted butter, not the unsalted butter. Also Bird’s vanilla custard powder, powdered sugar, about 1/4 cup milk with the melted butter for the middle layer. It’s lighter and fluffier than this custard looks. Oh, and only 1/2 of a beaten egg for the bottom layer, just enough to hold it together. You can leave the egg out, but then the bottom is very crumbly. Delicious still.

These are a nice road trip treat. It’s very very common to stop in the middle of nowhere at a gas station and find a little basket of these by the till wrapped in cling wrap. Someone’s gramma makes them or something. Two bucks a piece. It might be good with icecream maybe, but these are not eaten warm, but rather room temp usually. The top chocolate layer is sweating a little. Make some and see for yourself! They also freeze well! Who so ever brings the still frozen tray of Nanaimo bars to the potluck is truly a king among men

Huh this is like 3 classic Australian country bakery slices combined into 1 - hedgehog base, vanilla slice middle and then the chocolate top from either caramel or mint slice.
I used to make those. For Christmas? It really good.

Exactly. The true origin of this treat will forever be a mystery, IMO. Anyone claiming to have a definitive answer doesn’t understand that the “sources” they have consulted might themselves be filled with self-report bias, etc. I just realized how wound up I sound, which is not my intention. So let me take it down a notch and wish a Happy Canada Day to everyone who celebrates!! 🇨🇦 🇨🇦🇨🇦🇨🇦🇨🇦 As for me? I have hung onto my Expo ‘86 cookbook all these years for the nostalgia, AND the fact that it contains 3 Nanaimo bar recipes. (The original and two others with a “modern” twist.) Custard powder? Is that like custard mix that comes in the little boxes you find in the box pudding section of a grocery store?
The custard to use is Bird’s custard. It’s an egg free custard powder. If you can’t find it in the store, because maybe you don’t live in Canada, you will find this at a British import store or import section of your grocery. It is a tube container like a coffee tin, that is red blue and yellow. Iconic 😊

Have you ever had custard? It is like a vanilla ish pudding made from eggs. The instant custard powder used in a traditional Nanaimo bar is an egg free custard powder from the brand Bird’s. It’s a common addition to deserts in Canada and England and maybe other places in the commonwealth too. You can find it at a British import store if you’re curious.
