I made whole NY style dressed squab for the first time a couple months ago. Cooked it whole like in the video to keep it rare to medium rare and used the innards to fortify a sauce for the bird that contained: shallots, white wine, Demi glacé, herbs, mushrooms, and garlic.

Nice vid, but I'm not big on eating birds rare.
Squab, along with duck and goose breasts and quail, is one of the few poultry’s that can, and must, be served rare or medium rare cause it’s also a red meat bird.
