I think he writes normally and then they simply mirror the video. I could be that he is left handed and indeed is writting in mirrored but only a small portion of the population writes with the left hand.
Its crazy how a simple drawn out example on the decision tree can be so much easier at explain something better then google, chatgpt, stackoverflow ect.... thank you!

A random forest is a forest of (many) independent decision trees.
