- Lemon posset has to be one of the best simple desserts, using just 3 ingredients, we have complimented with raspberries and shortbread for a perfect treat or dinner party dessert
Shopping List -
Lemon Posset -
600ml double cream
2 lemons
150gm caster sugar
Raspberry Coulis -
275gm fresh raspberries
45gm caster sugar
Shortbread -
150gm plain flour
100gm unsalted butter
50gm caster sugar
I love this simple little dessert and has to be one of my favourites, give it a try and impress your dinner guests

The biscuit is called shortbread and yes you can use any type of glass or serving vessel you desire
You dont strain the zest out???
Why would you strain out the flavour, when it’s cooked it softens
Is double cream the same as whipping cream? 35%?
No double cream is around 48% fat, you need that much fat content, by adding the lemon juice to the cream, the lemon juice acidifies the cream, causing it to thicken.
