Just wondering why you need to stick the bezel on perfectly if the bezel turns? Just stick it on and then turn the dial until it lines up, with 12, right? Or is it because the clicks could cause it to be just barely misaligned?

Correct, the clicks don’t have a lot of wiggle room or play, so you want to align it first time
