- Iris is a unique restaurant located inside a floating orb called Salmon Eye in Hardangerfjord, Norway.
It’s the world’s largest floating art installation. The scenery is absolutely breathtaking of course,
but something keeps popping up in my mind. That film from 2022. The Menu.

Because its not mentioned in the video: the food is 3200kr(309€) and the drink pairing is 2500kr(220€) , which is tbh not that exspensive considering this is Norway
That is actually less than I expected and considering the whole package quite reasonable.
Does the menu price include the boat trip?

I was thinking a price of €500 and a further €200 for the wine was the sort of level I'd expect for this, so €300 does seem reasonable for what it is. It's possible they're starting with a lower price to attract people seeing as it's a brand new restaurant, I suppose.
I’ve always thought that the alcohol portion is a scam and I will always believe this. The cost for the experience and the food is acceptable. However, pair the offerings with wines priced around €30 per bottle and I guarantee that not you or me would be able to tell the difference. In this era of sustainability as an industry in itself, future generations will (hopefully) look at how certain cultures valued wine and shake their heads at our arrogance and wilful desire to be dimwits.
Immediately noticed you took some critiques from the previous videos and went more in depth for each dish, really appreciate it. This was easily the most enjoyable, attention grabbing video of yours so far. Love this channel

A crazy-expensive restaurant where you need to get to by private boat giving a lesson on sustainability is quite rich, I gotta say.
Same thought crossed my mind...Private schools are just a little more on the expensive side.
And caviar. Sturgeon caviar is not a sustainable food
absolutely nothing about this restaurant is sustainable. Its the polar opposite. most people travel from around the world on jets and boats to get to it.
Its not that expensive bro, im from the area, and most of the visitors are from the same region in Norway😅 At least if youre norwegian its not that expensive compared to other regular restaurants

The restaurant is the equivalent to a film made to win an Oscar. I hope thay make it big time.
I wanted to leave a comment but your wording does the restaurant justice. Best dining experience I can think of (that I’ve seen on TH-cam or experienced)
There is a term for that... "Oscar bait". Basically a thing that is made specifically to will a particular award. Everything in this restaurant feels like it geared towards winning an award.... nothing more.

@@dinopassas8390 I am not saying the quality will drop in the future. I am just saying that this is a visibly shallow attempt to win awards on the back of the "sustainability message".
and this is all just an effort to sanitise the image of fish farming, which does huge damage to wild fish populations and the marine ecosystem generally! sadly, it seems to be very effective... so far at least.

It points out the fact that we Norwegians love to take walks in the mountains, and outside. This saying is often told to kids by their parentes or in kindergarten. As Norwegian children are taught to love nature and hikes early on.
Stunning filmography that completely immerses the viewers in the experience. A visual feast. Coupled with your light-hearted but detailed summary of each dish, has made me a dedicated subscriber eager for every new video. Gorgeous restaurant, whose menu does its amazing surroundings justice. Each dish was a piece of art but unpretentious which makes them look that much more delicious. As you say, clearly, this chef is destined for greatness. Thank you for sharing and hats off.
I think fine dining is where you go from selling food to selling an experience, and it seems this restaurant is taking that approach to the peak. Excellent.
Interesting place, really lovely video, but no prices! This is the first time I can recall that you didn't mention the cost of the meal and wine pairings!
The menu/experience is 3200NOK, which is ~285EUR. Unsure about the wine menu though :D

A restaurant focused on sustainability when sitting in a building anchored in the middle of fjord, made of many tons of steel, and only accessible by boat for small groups of wealthy guests. Sustainability is definitely the first thought that comes to mind... lol

You give me a look into food I will never come close to tasting, so much so that I feel I can almost taste and smell the dishes you've captured. Thank you Alexander, if it weren't for you're exquisite detail I would never know how to imagine such things.
I think this has to be the most eclectic restaurant I have ever seen. Not only in the food served but also the location. The structure it is in. Talk about different! Extremely unique. The menu was avant garde! This experience you had really did remind me of the movie, “The Menu”. As long as Fiennes didn’t show up!

Hahaha a message of sustainability for who? The mostly poor part of Earth's population that lives from one meal to the next...? They couldn't care less for this crap. First solve poverty or else sustainability remains a dream for the rich and powerful 👍

That looks like such a wonderful experience. The fact the food was so good just makes it even better.
13:30 the concept "ditching" sustainability is actually quite accurate imo. It looks like a great experience and they sure put some sustainable foods on the plate but otherwise..? The whole location and idea is so incredibly wasteful. I'm not saying that it's terrible and shouldn't exist, i think there is a place for luxury in this world, but then advertising to be climate friendly..? That's just two opposites clashing and i think it makes them look bad and not very selfaware.

If you like remote places, you should visit Fogo Island Inn in Newfoundland, Canada. It’s a community-forward architectural gem with a unique table.
Obviously, Canada didn’t really have Michelin stars until 2022 and Alo is not on World’s 50 Best anymore, so I don’t know what would convince you specifically to come. I’d suggest visiting some restaurants in Montreal too, but natural wine is so dominant here in fine dining that you wouldn’t like most wine lists.

I would love to see you review Alchemist, which has also been described as "The Menu" vibes, and serves food with ingredients not often seen in European cooking, like blood and chicken feet, to promote sustainable eating. Other people who have reviewed it make it look fascinatingly creepy.

I recently had the caviar popsicle at CODA** in Berlin. Artichoke and vanilla iced cream covered in Sturia caviar - one of my new favourites.
While it's nothing new that fine dining focuses more and more on sustainability, this one feels even deeper in that regard. The choices and ideas are incredible. Really looking forward to seeing what this crew can achieve in the future.
I could not agree less. This massive structure, built from steel and accessible only by boat, seems to contradict the principles it ostensibly stands for. There's already a serious issue with overfishing in our oceans. The apparent commercialization of sustainability efforts feels disingenuous, especially with the involvement of Michelin and the seeming self-congratulatory nature of the initiative.

That "Ut på tur, aldrig sur" got me a bit nostalgic. Our teacehrs would reminds us of that everythime we would do a day hike as children, both to remind us to keep a positive attitude outdoors, and to try and make us shut up when it rained.

It was nice to see them serve a beer. Here in colorado there are breweries everywhere and i feel that well crafted beer is far to often overlooked by fine restaurants.

I almost never comment in youtube videos, but went here this month (October). I cried a bit from happiness during the meal. I have never really understood wine + food pairing before one of their dishes. We had the upgraded drinking menu and I out of curiosity asked: "what do you pair this with in cheaper tier" and they made second dish for us. I was blown away. (I recommend the more expensive drinks it was mind blowing)

This is one of the most interesting restaurants you have ever presented. Being only 3 days (!) in business Iris served a phantastic culinary journey through flavours & textures, stunningly presented, and paired with an excellent wine selection as well. What I found especially interesting is the change of venue several times during the menue, so that a real holistic experience was created. I currently live in Australia, but if I had the fund to travel to Norway, this restaurant would be the place to go to. So experimental, courageous combinations, friendly people, and breathtaking scenery - ten stars from me !

when your passion & love is the restaurant experience, this place makes sense. Education about the environment needs to take place on all levels after all, the person who dines here may become inspired to take better care in their way.
