  • I was beginning to think it wasn't possible, but after testing more batches of air fried mushrooms than I care to admit, this technique works perfectly in ANY air fryer! I even test them out in several air fryers in the video, including the Ninja Foodi XL air fryer oven!

    I made a small batch of these to go with my lunch. We had 2 crab cakes each, 4 air fried mushrooms each and a side salad. They were really good. I really like your fork technique for the batter and the bread crumbs; it worked great and no messy, breadcrumb caked hands. I ate them with a garlic aioli sauce which I thought was a great dipping sauce.

    I love deep fried mushrooms and they are so hard to find. And if you do find a restaurant that serves them, they are super expensive. I am so thrilled to find this recipe for them. Thank you SO much, Louise. Cannot wait to make them. Quick question. The spritzer you are using here is the Evo one in your store link below, right? And I don't like any sauce with mine. Hubby loves them with marinara sauce, so I'll have to check out your recipe.

    Love watching different cooks videos and getting different ideas of what can be done in an air fryer and how. For a lot of things, I think it's a case of trial and error combined with existing knowledge of cooking, finding out what works best. These mushies look great.

    I must say I’m extremely impressed by your cooking skills! Had the nuggets last week and just tried these mushrooms tonight in the ninja foodi and I couldn’t be happier! They really do taste just like you would get in a steakhouse. Going to probably try all your foodi recipes

    I found your recipe in a search for air fried breaded mushrooms. They were easy and cooked perfectly. I didn't dip them because I wanted to really taste them. I could have used more salt but if I was dipping, I probably wouldn't notice it. Thank you, these were soooo good!

    Wow 3 years old and this vid still applies today (2024 Feb.)! Furthermore this has got to be thhe best review on multiple appliances not only for comparison but also for cooking a popular restraunt menu appetizer. Non the less I just purchased a NuWave Bravo XL (the big one) and the Ninja Dual basket (Same as yours) 2 weeks ago and based on your review I believe I can cook anything. I have been using an Oster all in one convection (w/ french doors) and couldn't be happier but she's over 3 years old and I believe the bottom heating element is failing. I am so glad to have found your channel an look forward to browsing all of your vids. Not to mention I learned a few tricks from you from this one. Thank young lady for helping me make a difficult day a little better. avb P.S ....I picked up 2 lbs (each) of Portabella & White mushrooms and will be cooking them over the weekend for a party I'm having. I will def. be using your batter and recipie.

    So glad I found your channel. I subscribed! You popped up in my feed this morning, probably because I recently Googled recipes for Houlihan's Stuffed Mushrooms. (A restaurant appetizer I loved, but alas, they have closed many of their locations over the years.) They are like your fried mushrooms but stuffed with a garlic and soft, creamy garlic and herb boursin cheese. I love great fried mushrooms, so I will definitely try these soon! Thank you!

    Those looked delicious! I love fried mushrooms but have never done them. I will have to try these in my ninja foodi. One question what is yum yum sauce?

    So, I once tolk a Women in Economics class. Did u know that the original studies on equal pay looked at the complexity of cooking for 1960s housewifes vs. laboratory scientists? Turns out the housewives' cooking was WAY more complicated with all the scratch cooking, baking, candy (!) plus adjustments and steps. This made me think of that! Epic kudos, as always, Louise.

    Your batter reminds me of crepe batter which must be rested in the fridge because of the gluten development thing. Have you ever tried using crepe batter and how did it turn out? These mushrooms look wonderful and I will certainly be giving them a try!!

    What brand of cooling racks do you have?
    Also, have you ever tried using a high protein flour? I’ve heard it makes things crispier, I have not tried yet but I might try tonight. Also, have you ever added cornstarch to your flour? Another thing I’ve heard helps to make things crispy.

    Have you tried checking your different cookers with an oven thermometer? One time I had an oven where the temperature was WAYYY off and all the adjustment was not enough to get the temperature right. possibly there is an adjustment or a sensor which is out of spec.

    My favorite is Pasta House Fried portobello fires. I think I can modify and cut the fries in pieces. Can’t wait to try this. Only difference is they use parmesan in their crust.

      I air crisped the Portobello fries. I did have to increase the time by 2 minutes to get them the color of yours. Could have been my oil spritzer as it didn’t work at the angle needed for a good spray. Very tasty

    The first time I bit into one of these breaded mushrooms as a kid, I thought the juice that gushed out was melted butter. Now I know it’s just mushroom juice, but it still tastes amazing to me.

    If you were making a sharp cheddar cheese batter to air fry cordycep mushrooms how would you do that? I so appreciate your advice more than I can say! So thank you again for making these videos. Cordycep mushrooms can be difficult to grow. They are expensive to purchase but, they're worth the cost because they're so absolutely vital to superior health!

    I am absolutely doing this exactly as you suggested. I do wonder though about how essential the very cold ingredients are. You spent a long time talking before using the water and egg. Didn't they get back to room temp by that time? And yet, they still turned out perfect. Again, I'll do it as you prescribed, just wondering.

      The cold ingredients make it easier to incorporate the flour without it clumping up and you don't want to have to mix so much that you develop the gluten. If they are out 5-10 minutes, that's fine.

      I would try replacing the cold water with cold beer and see if that imparts enough of the flavor you want.

    I wonder how carbquick would work instead of flour. I’m on low carb and try to stay away from flour and breadcrumbs but I don’t know what I could use instead. Some recipes call for using pork rinds for crumbs. I have not tried those. What do you think?

    I have used (Isopure) unflavored whey protein isolate 1:1 for all purpose flour in a dry keto breading for air fried chicken. I have yet to dry it in place of flour in a wet batter. Have you given whey protein isolate a try in such applications?

    I use my ninja oven for so many things but air fry…nope. I have been sick and got home from the hospital, and I roasted a chicken in the XL oven. I cut up root vegetables drizzled olive oil and put spices on them dump them onto parchment paper and onto a pan and put it into the XL oven on one of the racks. I cut up a chicken and marinated it all day. I put that on parchment paper, I said the temperature to 325 and cooked everything for one hour and 15 minutes. It was the most tender chicken I’ve ever made in my life. Even after being refrigerated for several days, it’s still as tender as can be. I just love my Ninja equipment. I ordered the new foodie which should be here tomorrow. I’m in love with it. And it is funny that you do need to experiment quite a bit to get everything down perfect. The thing I love about Louise, and the salt and pepper, is nobody can spice food as perfectly as this girl. You know if you use her recipes you are just gonna be one happy camper. I can see how she’s obsessed with certain things, which I find quite funny. Cooking is such a not exact science. As long as it comes out tasty at the end of the day I’m happy as can be.

    I commented earlier on your air-fried onion rings post, but just realized while watching this video that your oven fryer tip may not work for the black and decker crsp n' bake models. The 4-slice model's air fryer setting locks at 425F . But if i preheat 10 minutes, do you think there’s something else i can do to iprove the crispness?

    I made your recipe for mushrooms, and it was great, I also breaded my shrimp and cooked them with your mushroom recipe also turned out delicious. I know you worked hard on creating and testing this recipe. In your trials did you happen to substitute cold beer for ice water? If you did, how did that work? If you didn't, do you think it could be done with good results? Thank you for a great post.

      I didn't use the beer in this recipe, but I did in my onion ring recipe and although I didn't really taste the beer it worked fine. It should work just fine in this recipe as well.
