Authentic Jamaican Christmas Black Rum Cake Recipe

Here are the ingredients
For the Fruit Mixture:
1 lb raisins
1 lb prunes
1 lb currants
1 cup cherries (optional)
1 cup mixed peel (optional)
3 Bay Leaf
Two Cinnamon sticks
Vanilla
Almond spice
Mix spice
2 cups red wine (or port wine)
1 cup Jamaican white overproof rum
For the Cake Batter
2 cups all-purpose flour
2 cups dark brown sugar
1 cup unsalted butter (softened)
8 large eggs
1 tsp vanilla extract
1 tsp almond extract
1 tsp rose water
1 tsp lime or lemon zest
1 tsp grated nutmeg
1 tsp ground cinnamon
1 tsp ground allspice
1/4 tsp salt
1 tsp baking powder
1 tsp baking soda
