Meadmaker here. This is a derived mead that is made. 1. You didn't need to add honey. We add honey cause we make MEAD aka wine honey, an old alcohol beverage made from water and honey. So, you could've used only the sugar from the soda or added raw sugar. We use the sugar from the honey. 2. The yeast will most likely not eat all of it. This depends on the alcoholic tolerance of it, with more than 1kg of sugar. This will be a high ABV (alcohol by volume), but the final ABV is limited by that alcoholic tolerance. So, for instance, if the alcoholic tolerance of the yeast is 18%, it means your drink won't go past 18%, and the leftover sugar will just sweeten the drink. 3. The pH level isn't necessarily an issue, to be honest, but it's good to fix it but never had issues with it. Edit: I seemed to have sparked some people's interests, so don't hesitate to comment any questions you might have!

Dude, you should have just pressed some oranges, or make mead and add orange to it during primary. Also, heating up the fanta a bit makes the honey dissolve faster. Also, use a hydrometer or refractometer to determing original gravity of your liquid to determine the estimated ABV next time. You can also use it to see of the wine is done. I'm making a mead now with a gravity of 1.100, one month will be optimistic. Not to mention conditioning takes several months to over a year. It will taste like ass after just a month

The best part about homebrewing is that you can do whatever you want during prep, fermentation and conditioning to have it taste exactly like you want. I'm now making a mango-pineapple melomel
it would work better if you raised the ph levels before you put the yeast in, because the reason it doesn’t ferment is because the yeast denatures/dies to put it simply because of the low ph, so some already had denatured when you first put it in before the baking soda.

optimal pH for brewing is around 4.5, not for the yeast, but to prevent harmful bacteria from colonising your wine, beer whatever. Moreover, the sugar will still remain after it, the maximum yield is 15%, as anymore and the yeast start dying
After fermentation, you will get mash, which still needs to be distilled properly so as not to drink anything harmful to the body, after which you will get raw alcohol which needs to be diluted with water to a certain strength and distilled again
Science behind this: the 6-carbon glucose is simplified to 3-carbon pyruvate and during the process pf fermentation this pyruvate is broken down to ethanol (ethene-alcahol) and carboj dioxide and 2 and energy (about 2kj)
