Binging with Babish: Brock's Onigiri from Pokémon

  • Okay, it's April 2nd, fun's over. This week, for reals this time, we're making onigiri: the breakfasty-lunchy-snack, ubiquitous in Japan, and virtually unheard of here in the US. As such, some committee of suits saw fit to Americanize their portrayal on Pokémon, and a generation of these United States grew up thinking they were donuts...and the bastards made ten hundred billion dollars. Was it worth it, 4Kids Entertainment? Oh, it was? No yeah you're right.

    As a Japanese person, I've never eaten or ever seen onigiri being made with sushi rice. It's made with just regular plain white rice with no flavoring/seasoning to the rice itself.

    • @paranoidhumanoid
      @paranoidhumanoid 3 ปีที่แล้ว +426

      I know! That's also why it kept falling apart! It should just be plain boiled rice and salt (optional) + filling. I screamed in horror when I saw him pour the sushi-su onto the rice! 😂😂😂

      @myewzek2913 3 ปีที่แล้ว +530

      I think the rice people use in the west is different from Japanese rice, so he just said sushi rice. Like our rice doesn’t stick at all, there’s no way we’d be able to form balls like that with it.

    • @paranoidhumanoid
      @paranoidhumanoid 3 ปีที่แล้ว +236

      @@myewzek2913 If you add sushi vinegar it won't stick for sure! Have to use short grain rice from Japan or California. Sushi vinegar is never used in onigiri - it's not sushi!!!

      @@paranoidhumanoid Unfortunately California’s pretty rich in Asian products. You don’t typically find a lot of regular Japanese rice in a lot of American (his target audience) states. In fact, if we narrow it down a little further, it’s difficult to find different types of rice in the east coast where he lives. So we have to settle for sushi rice nonetheless because Southeast Asian rice won’t stick, with or without vinegar. Hopefully Asian stores can provide more products in the future. (That is unless you lived around this area too and know where to find the right rice?
      My local Asian stores don’t have much, help would be appreciated :( )

    • @paranoidhumanoid
      @paranoidhumanoid 3 ปีที่แล้ว +66

      @@atinytrashcan6755 Regular Japanese rice and sweet rice can be found typically at most Asian grocery stores and definitely at chains like Mitsuwa. On the East Coast, particularly in the NY/NJ metro area (where Babish resides in a city with a large Japanese population), there are dozens of Japanese owned groceries including Mitsuwa, Daido, Dainobu, Sunrise Mart, Family Mart, Katagiri, etc. and many Chinese and Korean stores also carry the typical brands like Nishiki and Kokuho, Haru, Homare, and Kagayaki. 3 Walmart locations closest to me near Philly also carry Kokuho and Nishiki here on the East Coast (10 and 15lb bags). Walmart even carries the nori seaweed sheets and Pocky sticks!

    Su-mesi(vinegar rice) is only for sushi including Maki-zushi or Chirashi-zushi.
    Plain cooked rice is most important part of Onigiri...so...i confused.

    Normally you wouldn't use sushi seasoning for rice for onigiri. Typically you just put salt on your hands before forming them for seasoning. I have also found that if you're using a pressure cooker you really only need an equal volume of water to rice.
    Pactice helps a lot, as Babish found. I have made ume onigiri several times, and I've gotten to the point where they're hard to distinguish from "conbini onigiri."

      I do a dash of rice vinegar in the rice cooker but i also learned to just use plastic wrap or cheese cloth to form them rather than bare hands. Place the seaweed strip then mound the rice on the top slightly less than half, add filling, add more rice. Then you just fold up your wrap (folding the bottom half of the seaweed up) and twist the top. Then just form the triangle.
